HELP! Mom's of kids with allergies!

My son has SEVERE allergies to dairy, eggs, and peanuts. He is so allergic that if the items touch his skin, he starts swelling up!

I am looking for a good dairy free, egg free cake recipe to use for his birthday. He will be three next month and has never had cake! I would like to have a little party for him and thought it would be nice to have a cake. Any ideas?

my 4yr old has a milk allergy and we use the SILK Soymilk and she's ok with it. Not sure if you can sub a recipe with a dairy free alternative. I'm sure there's recipes out there Ill try and search later for something for ya
 
I make vegan bday cakes... I will warn you, sometimes they come out crappy LOL. The problem is that the things you use instead of milk.. butter.. eggs etc make it a bit less fluffy, so it's trial and error.

However.. I wanted to mention, if your market has a natural/organic/whatever section.. Check out the Gluten free section-- 9 times out of 10 I can find whatever sorts of mixes I want. For some reason Gluten free goes hand and hand with allergen free most of the time :D :D I've found awesome alternatives for cake.. brownies.. cookies.. muffins etc. :) GL

My daughter is allergic to whey protein. She is two and a half now, so I know now frustrating it can be trying to find food that they can eat. She drinks Vitamin enriched Rice Dream, which is a brand of rice MIlk. She loves it!! WE couldn't give her soy because it was just to heavy for her tummy to handle. I seriously hope she outgrows this allergy. I love cheese and everytime I eat it, I feel so bad when I have to tell her no she can not have any.
 
I am going to try some of the recipes this weekend. They don't seem as if they will taste bad...I was looking at the ingredients to Duncan Hines frostings and they do not have dairy...so maybe the frosting will camouflage a gross cake??

I think the grocery store down the street from my house has an "organic" section, will definitely check that out too!

I have seen this, but didn't think to try it...I think I am going to look into this! It's just so hard trying new things, but if there is no dairy (or milk proteins, whey, etc etc) He "should" be able to drink it!
 
You should PM Emmy (that's her username here, too). She has been busy today, so has not seen this thread yet, but I will point her in this direction if she gets on later tonight.

Her youngest son has all the same allergies (I think!) as your son & she's a hippie free spirit 'crunchy' kind of mom, anyways, so I know she has tons of good homemade safe recipes she'd be happy to share with you. :)
 
LeeAndra pinged me to alert to this thread LOL. My son does have the same allergies as yours. He is confirmed anaphylactic to milk and has severe allergies to the egg and peanut as well - he also gets hives from contact of his allergens. It's not easy! :)

Here is our cake recipe:

Wacky Cake

Yield: 12 cupcakes or 1 small square or 1 round. (you must double the recipe to have a 9x13 or layer cake)

1 1/2 cups flour
1 tsp. Baking Soda
1 cup Sugar
1/2 tsp. salt

Mix ingredients together in a bowl. Make 3 holes and put one of the following in each hole:

1 Tbsp. vinegar (I recommend white vinegar)
1 tsp. vanilla
6 Tbsp. oil

Pour 1 cup of water over the whole mixture and mix well.
Bake immediately in a 350 degree oven for 20-25 min. A toothpick will come out clean when they are finished.

Some notes:
I would fill the cupcake liners about 3/4 full since the cake has a limited rising ability. I also find that
cupcakes turn out the best since the larger cakes can be on the crumbly side.

Alternate versions:

Chocolate cake: Add 3 Tbsp. cocoa to dry ingredients
Orange cake: Use 1 tsp. orange extract in place of vanilla

Thank you SO much for the recipe!! Sometimes I feel like I am the only one on Earth going through this! A few weeks ago, he picked up a boiled egg at school (daycare-he is only 2) and they had to call 911. His epipens were expired (which I didn't realize!) It was pretty scary, but luckily the daycare is SUPER awesome with him. Apparently a little boy brought in a boiled egg for lunch...the director of the daycare has since sent out a letter stating that they are no longer allowed to bring in eggs. I thought that was pretty nice of her! She rode in the ambulance with him (I work 20 minutes away) Anyway, I feel myself babbling!! LOL!

Thanks again for the recipe, I am going to try it out this weekend to see if he likes it.
 
I think the wacky cake recipe should be very good. It seems that my mom made a cake very similar to this when we were growing - but we had no food allergies. We loved it!!
 
What type of frosting (if any) do you use? I was reading the Duncan Hines label tonight and didn't see anything suspicious! Have you used that before? Thanks!!
 
is his allergy to eggs just the egg whites or is it the whole egg? if it's just the egg whites you can substitute 1/4 of mayo for each egg that the recipe calls for. My little brother was allergic to egg white and that what my mom did for him. It works wonderfully and makes your cakes and cookies a bit moister.
