The last few days I have been taking the time to really cook and I have tonights dinner already prepped and ready to go in the oven. I am never like this but I have really been enjoying cooking. So far this week I have made some kick butt meat loaf, squash casserole, tryed a new recipe for home made mashed potatos, sausage casserole, and a summer fav. corn on the cob. Today we will be enjoying stuffed herb chicken, green beans, and rice....not to mention the yummy peach cobler I made today. Yay!! Oh and I forgot about the cake I made it was a new recipe to it is called Better then Sex? Yes! It was pretty good but I am not so sure about the better part....lol
 
I'm soooo feeling it too today I'm making a sausage and patato bake YUMMMM my first time making it, dh usually makes it and OMG it's soooo yummy!
 
Share your recipes!!! I just posted at DST about being Domestically challenged! I need as much help as I can get!

(The kids are eating bagel bites for lunch right now if that tells you anything! :o )
 
My DF always complains about me being domestically challenged. I remind him that he knows where the door is, and he know I was like this before he proposed :)

He's out of town for a few days, so I'm trying to decide between chicken fingers and chinese for dinner tonight :p
 
Ok here are some of the recipies....they are from Paula Dean she rocks

Basic Meat Loaf
(serves 4)

1lb ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 chopped bell pepper
1 egg (lightly beaten)
8oz canned diced tomatoes with juice
1/2 cup quick -cooking oats

Preheat oven to 375 degrees. Mix all meat loaf ingredients well and place in a baking dish. Shape into a loaf.

Topping
1/3 cup ketchup
2 tablespoons brown surgar
1 tablespoon mustard

Mix ingredients fo toppin and spread on loaf. Bake for 1 hour.

Sausage-Rice Casserole
(serves 4)

One 6oz box Uncle Ben's long-grain and wild rice
1 package of hillshire farm smoked sausage cut into small pieces
2 small onions chopped
4oz can mushroom pieces
10 oz condensed cream of mushroom soup
4 tablespoons butter

Preheat oven to 350 degrees. Cook rice according to directions on box. Boil sausage for about 10 min and drain. Combine all ingredients except butter and pour into casserole dish. Dot top with butter. Bake until bubbly, about 25 minutes.

Mashed Potatoes
(serves 8)

8 to 10 medium red new potatoes unpeeled
1/2 cup hot milk
8 tablespoons butter
1/2 cup sour cream
salt and pepper to taste

Slice potatoes 1/4 inch thick. Cook in boiling water for 15 min. or until fork-tender. Whip unpeeled cooked potatoes with electric mixer; mix until moderately smooth. Don't over beat them. Add hot milk, butter, and sour cream. Salt and pepper to taste. Whip until mixed. Adjust thickness by adding more milk, if desired.
 
Here's what I am making tonight :) It's super yummy!


SAUSAGE-POTATO BAKE

Ingredients

6 mild Italian sausages, casings removed
6 medium potatoes
1 medium onion
2 cups cheddar cheese
2 cans Golden Cream of Mushroom Soup
2 tbs flour
Salt and Pepper to taste

Directions

Remove casings from sausages and tear meat into small bite size pieces. Brown in frying pan.

Thinly slice the potatoes, leaving the skins on.

Chop the entire onion and shred the cheese.

In the slow cooker, layer half the potatoes followed by half the sausage and then half of the onion. Now put half of the shredded cheese on top. Add salt and pepper to taste and then sprinkle one tablespoon of flour on top. Repeat this entire process with the remaining half of the ingredients (don't forget to sprinkle the second tablespoon of flour on top) and then dump both cans of soup over the top of the entire thing. With the back of a spoon, smooth out the cream soup to cover the entire top.

Set Slow Cooker to high, takes 3 to 3.5 hours to cook. Once your potatoes are soft, it is ready.

I used to enjoy cooking... before having 2 kids! LOL!!! I don't mind cooking a couple times a week but I'm getting to where I want something quick, easy & healthy. None of which DH likes...

We are going out for Pizza and salad tonight with DS' baseball team.

HEHE! I'm getting to this point too! I used to LOVE to cook. I still like to but...

Oh, and grocery prices (like everything else going up) make it too hard to buy all the things we need for certain awesome-looking recipes.
 
Man I wish I liked to cook! I am a packaged meal kinda gal. Ya know like tacos, spaghetti that kind of stuff.


So where do you live and what time is dinner?!
 
lol oh I live in SC dinner is 6pm my time....lol

here's the recipe

18 oz choc. cake mix
14oz can sweetened condensed milk*
6oz jar caramel or hot fudge topping (I use fudge)
8oz Cool Whip
4 Skor Candy bars crushed*

Prepare cake according to directions and bake in 9x13 inch pan. Pierce warm cake all over with toothpick. Pour milk over cake. Pour caramel/fudge over cake. Chill. Before serving, top with whipped topping and sprinkle with crushed candy.

*If you don't have sweetened condensed milk you can do this.
~Mix 6 cups whole milk with 4 1/2 cups sugar, 1 stick of butter, and 1 tablespoon vanilla. Cook over medium heat for 1 hour. Stir occasionally. Cool. Makes 4 1/2cups. This can be stored for several weeks in the frig. however for immediate use cut the recipe in half.

*4 Skor Candy bars
~I used snickers instead because a. I don't remember what this candy bar is and b. snickers was staring me in the face....lol
