I'm craving beef stew. Must be the cooler temps. Anyone got a great recipe? Bonus if for slow cooker (although I suppose any recipe could work in a slow cooker?).

Oh oh!!! I just made beef stew on Sunday, and had like my sixth bowl of it today for lunch. I LOVE this stuff. This is a beefy beef soup/stew not a tomato based vegetable and beef one. First time I've ever tried this recipe, but I'd totally recommend it... Mmmm..

Beef Barley Soup

INGREDIENTS
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper, divided
2 pounds lean boneless beef sirloin steak , cut into 1/2-inch cubes
2 tablespoons canola oil
4 cups sliced fresh mushrooms
1 celery rib, sliced thin
2 cloves garlic, minced
1 small onion chopped
4 (14.5 ounce) cans reduced-sodium beef broth
4 medium carrots, sliced
1/2 teaspoon garlic powder
1 tbsp rosemary or thyme
1 cup pearl barley

DIRECTIONS
In a large resealable plastic bag, combine the flour, salt and 1/4 teaspoon pepper. Add beef and shake to coat. In a Dutch oven, brown beef in oil over medium heat. Remove and set aside.
In the same pan, saute mushrooms until tender. Add carrots, onions, garlic, and saute for 10 minutes. Add broth, rosemary, garlic powder and bring to a boil. Add barley and beef. Reduce heat; cover and simmer for 2 hours until the meat, vegetables and barley are tender.

*using QUICK cooking barley means you only have to simmer for about 30 minutes.

I amke this one alot, it's a WW's one. I also add a can of crushed tomatoe because we like our stew like that, not just a beef broth kind :D I added the nutritional facts and the points too!! :thumbup:

Beef Stew (6 Points)
6 Points Per Serving Serving Size : 8

1 pound beef stew meat -- cubed, 1"
8 teaspoons McCormick Beef Stew seasoning -- (1/2 package)
15 ounces green beans, canned -- 1 can
15 ounces canned black beans -- 1 can
15 ounces peas, canned -- 1 can
15 ounces corn, canned -- 1 can
3 cups water

Put in a crockpot and simmer all day (about 8 hours or so).

If you can not find McCormick Beef Stew seasoning use another brand of seasoning or use your own favorite spices i.e.: salt, pepper, garlic, or onion soup mix :)

NOTES : Per serving: 309.4 cal, 12.4g (35.6%) fat, 6.4g fiber, 646mg sodium, 27.1g Carbs, 23.5g protein

Oh great thread Mimi... I LOVE LOVE LOVE Beef Stew, but have never made it myself!

This is pretty similar to Beef Stew, its call Hunter's Stew, a Sandra Lee Recipe and we love it. And its Crockpot

Hunter's Stew
2 1/2 pound beef round steak
1 can whole peeled tomatoes
1 8oz presliced fresh mushrooms
1 cup frozen sliced carrots
2 ribs celery, sliced
1 1/2 cups reduced-sodium beef broth
1 cup condensed cream of mushroom soup
1 packet beef stew seasonining
Serve over hot Egg Noodles or Rice (we used rice)

1. Cut steak into 6 serving-size portions; set aside

2. In a 5 qt slow cooker (mine is 4 and worked fine), combine undrained tomatoes, mushrooms, carrots, & celery. Place steak on top of vegetables.

3. In a medium bowl, whisk together beef broth, soup, and beef stew seasoning mix. Pour over steaks.

4. Cover & cook on low for 8 to 10 hours.

5. Serve with Egg noodles or rice.
