I'm attempting to cook more rounded-out meals here, lol. I don't eat veggies so I am NOT good at figuring this stuff out, lol.
Tonight I'm planning on making sweet & sour meatballs with rice for dinner, so what sort of veggie would you make with that? Or would you just do salad with it?
I really am clueless, lol...

Broccoli, zucchini and onions, maybe even squash...
Have you ever seen that Jessica Seinfeld cookbook, Deceptively Delicious? It has all kinds of cool ideas for hiding veggies in your normal meals. I love it! :D

My kids and DH have NO problem eating veggies. I do, however, lol...and I won't eat it if I know it's in there. ;)
Thanks for all the suggestions. I'll have to see what's in my freezer, I bought a bunch of stuff yesterday, lol...

I'd do green beans or salad. (Well, at least in theory I would. In reality I'd make green beans since the boys will eat those and won't eat salad.)

Broccoli or sugar snap peas. Snow peas and water chestnuts would go well also.

I wouldn't do a veggie at all, I would do some fresh (or canned) pinapple slices.
