Mine are different, but yummo...
You need:
- 4 boneless chicken breasts
- black forest ham sliced
- swiss cheese cut into slices
- corn flake crumbs crushed to smithereens with a bit of dried oregano or parsley mixed in, placed in a bowl
- buttermilk or milk, placed in another bowl
- toothpicks
- cookie sheet covered in foil, with a wire rack, for easy cleanup
Here's what I do:
- preheat the oven to 375F
- Take 4 boneless chicken breasts, bigger is better
- Put down a piece of wax paper, put 1 piece on, then put a piece of wax paper on top. Beat the hell out of the chicken until it's nice and flat LOL. You can use a special kitchen mallot if you want, but I use the bottom of a wide glass, cause I don't have one.
- repeat for other 3 chicken breasts
- in a bowl place buttermilk, or I just use skim milk
- one at a time, place chicken breasts down flat and layer with a piece or two of already sliced black forest ham, and a piece of swiss cheese. Roll up said chicken breast and secure with 3 or so toothpicks
- repeat for other 3
- dip each rolled up chicken breast into the buttermilk or milk
- dip each into the milk first, then into the cornflake crumb mixture
Lay chicky on a cookie sheet as described above
Bake for around 45 min or so. Sometimes less, sometimes more, depends on the thickness of your chicken.
