Cinco de Mayo (aka your favorite Mexican recipes?)

Even though we don't have any heritage in this...we use Cinco de Mayo as a yearly excuse to make that one huge day of Mexican food and feasting.

What are your favorite Mexican recipes?

Here is the one recipe that Cinco de Mayo would not be complete without:

I don't know how to cook authentic mexican very well so we just go to any of our favorite mexican restaurants. We LOVE Chile Poblanos and Chile Rellenos and I also love Fajitas! But my hubby is a mexican food fanatic! He'd eat it every single day if he could. Although, I like it, I can't eat it every day.
 
My grandfather was Mexican and he used to make these things called chillaquillas and they are YUMMY!!
 
ooh I don't have any good recipes, i do good to make tacos, lol but this is such a cool idea, I think we'll do it this year too!
 
I need to learn how to cook some of my mom's yummy food or my dad's awesome tacos... but for now, I just go to their house :)

Funny though - we don't really do anything on 5 de Mayo. We do on "9 de Mayo"... because it's my birthday LOL
 
I make some pretty fantastic chicken enchiladas that we all love. OK, we all means me and Andrew...but they're always a hit with guests too!
 
Mexican eggrolls. The recipe is around here someplace. I posted it around superbowl time. I'll go see if I can find it.
 
Ah! That's the perfect excuse for me to make those Sara! Dig them up please? :)
