Egg recipes?

I need recipes using lots of eggs! DH was on unemployment for the last 6 months (thankfully he just got a job :thumbup:) and we were getting WIC for those 6 months. I just used my last coupons, and now I have like 30 eggs!! I don't know what to make, I don't want to waste them!! I don't really use eggs that often so all I can think of is deviled eggs and baking brownies and cookies lol! And since I'm trying to lose weight, those probably aren't the best options! Any ideas? TIA ladies!!
 
How about scrambled eggs, omelets or french toast for breakfast, or even dinner since we like to have breakfast for dinner sometimes!

hmm I don't know what else, I'd probably be making cakes and cookies and stuff lol!
 
Oh, oh I know... Huevos Rancheros.

1/2 med. white onion, chopped
2-3 cloves garlic, pressed or finely chopped
1 tbsp. olive or canola oil
2 15oz. cans of Petite Diced Tomatoes
1 small can diced green chiles
1 beef bullion cube
1 can tomato sauce (use El Pato if you like stuff a little bit hotter, which I do)
10-15 oz. water
pepper
6 eggs
1 c. shredded cheddar cheese

Dice onion and press garlic. Put oil in 12-inch skillet. Saute onion and garlic until soft. Add tomatoes, chiles, tomato sauce, water, pepper and bullion cube. Simmer until reduced and thickened. (I suggest adding the water a little at a time to avoid putting in too much. And I usually simmer for 15-20 minutes.)

Add eggs. Cover pan and poach eggs until desired doneness. I like mine fully cooked which takes about 10 minutes or so.

Once cooked, top with cheddar cheese.

I serve it with homemade spanish rice, refried beans and tortillas.
 
Hmm..we go through at least an 18 ct carton of eggs a week around here lol...

Let's see...DS eats at least 2 eggs scrambled most mornings, I use them in french toast and pancakes etc. and on the weekends I make a big breakfast both mornings..sometimes DH likes his fried or in a breakfast burrito.

Other than breakfast I use them in cooking something or other just about every day. We love egg salad sandwiches or deviled eggs. I just had to send DH to pick up another carton this morning lol. But you know eggs will keep 3-4 weeks in the fridge. We just never seem to be able to keep them that long lol
 
If you're trying to lose weight, hard boiled egg whites are filling and very low in calories. (We throw out the yolks.) We boil at least 18 at a time, and with 4 of us eating them they never last more than a couple of days. They're my 5 year old's favorite breakfast food.
 
OMG..gonna save that recipe and make them if I still have any eggs left tomorrow morning!!!!:cursing:
