meatloaf recipes

so we all have them I think but how do you make your meatloaf? I dont really make it by recipe just throw some stuff together. Basically here is mine:

preheat oven to 350 degrees

1 to 1 1/2 pounds hamburger meat
1/2 to 3/4 pound ground pork or pork sausage
1 to 1 1/2 cups crackers or bread crumbs
small can tomato sauce
one egg
sprinkle of salt
sprinkle of pepper
sprinkle or two of worschtershire sauce
(and a couple other miscelaneous seasonings LOL)

moosh it all together in a bowl until well mixed. take it out of bowl and form a loaf in pan. bake in oven for like 45 minutes then add a little ketchup/tomato sauce on top and finish baking for another 15-25 minutes until cooked through.

Thats about it. Like I said I have made it so many times I pretty much already know the ingredients and never really measure anything.

So how about you? Do you just kinda guess like me? LOL or do you have an actual recipe?
 
Ive also made it where I take mashed potatoes and put them in between the loaves and add some cheese on top of that. It turned out pretty well too. The only thing I cannot figure out is how to get the grease to drain off the meatloaf LOL
 
My meatloaf recipe has been known to turn non-meatloaf-lovers into LOVERS! LOL

I use 2 pounds of ground beef, about a tbsp. of garlic, some chopped onion , a couple of dashes of worchestershire sauce and Italian seasoning. I add an egg or two and a good, heaping cup of crushed Triscuit Cracked Pepper & Olive Oil crackers. I smush it all up and stick it in a loaf pan. Cook for about 45 minutes - 1 hour at 350 degrees.

While that's cooking, I mix about 3/4 cup of ketchup, with 1/4 cup of brown sugar and some pineapple tidbits (with juice) and pour that over top when there's about 20 minutes left to cook.

It is yummy!
 
Mine's, IMO, relatively basic. It's really good though!

Cheesy BBQ Meatloaf

2lbs lean ground beef (93% is my pick)
2 eggs
½ cup BBQ sauce of choice
scant ½ cup bread crumbs
montreal steak seasoning (I don't measure, my MSS is a grinder. Maybe 10-12 grinds?)
½ large sweet onion (Maya or Vidalia)
shredded cheese

In large bowl, mix first six ingredients until just mixed. Place half of mixture into a 9x5 loaf pan, spread evenly. Top with shredded cheese until covered, add remaining meat mixture. If desired, top with more BBQ sauce. Bake, uncovered, for about 45 minutes or until done (160°F internal temp) at 350°F.

Tonight I'm making this meatloaf:

Zesty Chicken Loaf

1lb ground chicken
2 eggs
1½ cups bread crumbs
3 Tbsp salsa of choice
2 Tbsp Ranch dressing (sub italian if you don't like ranch)
1 pkg taco seasoning mix (1.25oz)
½ cup shredded cheese
sour cream (optional)

Directions:

1 Preheat oven to 350°F (175°C). Grease 9x5 loaf pan.
2. In large bowl, combine first six ingredients. Pack into loaf pan.
3. Bake for 1 hour, top with cheese and serve with sour cream.

I tend to make meatloafins out of both recipes. Just scoop into muffin tins or mini loaf pans and adjust cook time accordingly. The ZCL we made in mini muffin tins tonight took about 15 minutes to reach 170°F internal.

That sounds yummy!! I never thought to use those!!!

And I am gonna definitely try Paula Dean Cheeseburger one now!!! That sound awesome!!


I have two that I switch between.

Easy Meatloaf

2lbs ground beef (93%)
1 pkg Stove Top Stuffing (dry)
1 egg
2 tablespoons milk

Mix everything together well, form into a loaf ( or your desired shape)and place it on a foil wrapped cookie sheet. bake 350, 45-55 minutes. 15minutes before done, open and pour sauce over top (Sauce recipe to follow)

Grandma's Meatloaf

2lbs hamburger (93%)
2 eggs
3/4 cups soda cracker (saltines) crumbs
2 tablespoons milk
2 tbsp minced onion
pepper to taste
(only add salt if you use unsalted crackers)

Sauce:
1 1/2 cups ketchup
6 tbsp brown sugar
4 tbsp mustard
2 tsp NUTMEG (seriously)


Mix the meatloaf ingredients, make into a loaf and place on a foiled cookie sheet. Bake 350, 45-55 minutes. Mix sauce well, no lumps, pour over meatloaf the last 15 minutes of baking.

Put bread in the bottom of your pan and it will absorb the grease!!


Paula Deen's Cheeseburger Meatloaf is yummy! We love it! But make sure you watch the video on the site, she tells you more there than the recipe says.

I just bought a loaf pan that has an insert for meatloaf and the insert has holes in it so it'll drain into the other pan.
 
Yep - you'll have to pry my draining meatloaf pan from my cold dead hands...I'll never give it up!

Something else we do is cook meatloaf muffins - just put the mixture into muffin tins. DH likes meatloaf ends, so this gives him all 'ends'.
 
I love this recipe from Elise at Simply Recipes. I like how I can sneak some veggies into my meat&potatoes men. Adore meatloaf in general and will have to try these out.
 
Mine is really simple...

1lb ground beef
1 cut up onion
1 box of Stove Top
1 can of tomato soup

Mix them together and I think it bakes at 350 for 55 minutes. It is SO yummy!
 
MEAT LOAF w/ BROWN SUGAR
½ Cup Brown Sugar, Packed
½ Cup Ketchup
1 ½ lbs. Lean Ground Beef
¾ Cup Milk
2 Eggs
1 ½ tsp. Salt
¼ tsp. Black Pepper
1 Small Onion, Chopped
¼ tsp. Ground Ginger
¾ Cup Crushed Saltines

Heat oven to 350. Grease 5 x 9 inch loaf pan. Press the sugar on bottom of pan and top with ketchup. Mix together all other ingredients and shape into loaf. Place on top of brown sugar sauce. Bake for 1 hour.
 
I usually make this one from the Kraft magazine - Easy Pleasing Meatloaf, most of the time I make it in a muffin pan though (I have the silicone kind & love it) rather than as one loaf and it cooks in half the time and it's in perfect little portions! Also it's better if you use really really lean beef so there's not much grease. I'm going to look into one of those draining meatloaf pans though!

I love reading everyone's different takes on meatloaf! It's a fave in our house so this is so interesting!

Here's mine:
1 1/2 lbs hamburger
1/2 an onion
1/2 green pepper
1 egg
bread crumbs (I use Italian bread crumbs)
worchestire sauce
salt/pepper

combine the hamburger, chopped green pepper/onion, egg, worchestire sauce, salt/pepper in a bowl. I add bread crumbs as I go because my mom (who gave me the recipe) never really had a definite measurement. I just use enough so it firms up.

I make mini-meatloafs because then it doesn't take as long to cook. Usually 4 mini-loafs take about 35 minutes to cook at 375.

For a sauce on top I use ketchup, mustard, brown sugar, and worchestire sauce.

I've never met a person who doesn't like it ;)
