I forgot to put my chuck roast in the crock pot this morning before leaving for work and I really want pot roast tonight anyone have any oven based recipes for pot roast that won't take extremely long that your family likes. I hate searching online to find one without someone telling me how good it is first.

Not sure how long you have to cook it but I put mine in the oven at 400 for about 2 to 2-1/2 hours.

I just use onion soup mix, worcestershire sauce, and water and cook the carrots, onions, potatoes and celery in the same pot at the same time.

Do you use a 9x13 pan or what kind of pan and do you put the veggies in at the beginning to cook the whole time?

I just throw onion soup mix on my roast, flip the roast around in the roasting pan to slightly coat with the mix, throw the lid on it and put it in the oven at 350 for about 1 1/2 - 2 hours. I have a convection oven though, so it is probably different in a normal oven. Normally I cook a 3lb roast, and my roaster doesn't have enough room for veggies in it. But occasionally, I cut up some baby potatoes and carrot chunks and drizzle them with olive oil and spices and cook them in a 9x9 pan beside the roaster, same temp & same time.
