Diabetic dessert recipes (sugar cookies!!)

My dh was recently diagnosed at high risk for diabetes ... and although he has cut back drastically on his sweets (used to be 2 Cokes and a HUGE bowl of ice cream 5x a week between 6pm and bedtime... plus more on weekends...plus Coke at work) ....

However I am supposed to do my yearly cooking with my friend ... we do this EVERY year ... my dh didn't want to take care of the kids and their activities while I went to bake with my friend because as he said "I can't eat any of it anyway" (so in other words why would I want you to bake and give it to other people?? .... little on the selfish side I would say) ...

So............ has anyone made Sugar cookies (and frosting) before that is just so darn good that no one could believe it was for a diabetic???

Please please!! Share your recipes for Sugar cookies and any other dessert you may have made ... I am afraid if I try a so-so recipe or one that isn't very good at all ... he will just throw in the towel and go back to his sugary ways.

I've used a recipe the past three years from a Splenda cook book, but it's at my mom's right now. I'll see if I can find it this afternoon.

I would love to know too! This is our first Christmas with my hubby being diagnosed as Diabetic too (he was diagnosed in January) - and he has the exact same attitude - I'm not allowed to bake because HE can't eat it.

Here's a recipe from the Splenda site, so I'd guess it would be the same. I don't like cookies so I never tried them, but everyone else thought they were good.
