I use Daiya cheddar cheese shreds, unflavored coconut milk in a tetrapak (not canned), and DeBoles (sp?) rice pasta - the first time I used penne and last night I used spirals.
It's really good - very creamy and if you had it without making it or knowing what was in it you would swear it was full of dairy.
