Sweet and Spicy Cashew Chicken
1/2 recipe:
Ingredients:
Sauce
1/4 cup ketchup
2 tsp. soy sauce
1/4 tsp. salt
1 Tbsp. Worcestershire sauce
1.5 Tbsp. sugar
1 tsp. sesame oil
1/8 tsp. cayenne pepper
1/4 cup chicken broth
The Rest
1 Tbsp. cornstarch
1/4 tsp. sugar
1/8 tsp. salt
1.5 whole boneless, skinless chicken breasts, cut into cubes
1/8 cup oil
1 Tbsp. minced fresh ginger
.5 Tbsp. minced garlic
1/2 small onion, thinly sliced
1 red pepper, cut in strips
2 carrots, thinly sliced on diagonal
1 cups snow peas
3/4 cup cashews
Instructions:
Combine sauce ingredients and set aside. In a bowl, combine cornstarch, sugar and salt. Add chicken and toss. Heat wok or frying pan to highest heat. Add oil. Heat to hot, not smoking. Add chicken, ginger, garlic and onion. Stir until chicken is opaque (about 1 minute). Add peppers and carrots. Stir 2-3 minutes. Add peas and sauce. Cook until sauce comes to a boil. Add cashews and sprinkle with sesame seeds. Serve immediately. Serves 6.

It makes A LOT, the 1/2 recipe is usually good for us for 2 meals (for the 2 of us). You can serve it over rice, or pasta (I like it with pasta, dh likes it with rice)
