We make a slightly different version of this (with graham cracker crust) and it's always a huge hit. My MIL often does it half butterscotch, half chocolate. I prefer butterscotch.

crust:
1 c four
1/2 c. butter melted
1 tablespoon sugar
1/2 c. chopped pecans (sometimes I leave these out if I don't have any on hand)

Mix ingredients and then press into the bottom of a 9x13 in casserole dish. Crust should be thin. Bake at 250 for about 10 minutes or until golden brown...watch it carefully b/c it can burn easily.

Bottom layer:
8 oz cream cheese
1 1/4 c. powdered sugar
1/2 large container cool whip
1 tsp vanilla

Mix all ingredients in the bowl of an electric mixer until creamy. Pour onto top of cooled crust.

Middle Layer:
1 large pkg chocolate instant pudding
1 1/3 c. milk

Mix pudding and milk by hand about 50 strokes...pudding should be thick. Layer on top of cream cheese layer in casserole.

Top Layer:
remaining cool whip

This is always a huge hit. Never a bite left.
