Anybody make freezer jam?
I'm thinking that I'd like to try my hand at strawberry freezer jam and wonder if any of you have an easy/good recipe?

Well I did a few years ago and it's still in there because it's soooooo sugary...blech. LOL good luck!

I made some a few months ago and it was pretty good, but still too sugary for me... even though we cut down the sugar. Seriously, the recipe called for a nearly 1:1 ratio of sugar:strawberries. The sugar is needed for it to set properly, but if you get the pectin that doesn't need sugar then you can cut some of the sugar out of the recipe. I think... someone correct me if I'm wrong. I've only made it once. lol

I made peach freezer jam a couple of summers ago and it was really yummy - I used honey instead of sugar and it was just the right amount of sweet. If you're interested, I could try to dig out that recipe (hopefully I kept it and it wasn't just one I found on the 'net).
That reminds me that I need to get back to the farmers' market to get some more peaches |

Kate - I'd love that recipe if you could. I'd always prefer to use something more natural than processed sugar.
Freezer jam does, indeed, need a lot of sugar to set up properly. I'm not fond of the low-sugar pectin mixes, but they work. I just used the recipe on the pectin box, Leah. You can use less sugar if you're willing to can. |

Darcy, I looked in the usual places and haven't been able to find the recipe. I'll keep looking, though, because I want to make it again.
