Default What's for Dinner this week?

I'm working on my weekly menu this morning. Tempt me with something yummy...what are you making this week?

oh this week.... it's a challenge with the weather/baseball will they/won't they have a practice/game tonight issue as it is supposed to rain all week.

On the 3 days I know there is nothing going on we are having coq au vin, with a spinach salad, skirt steak with pan roasted broccoli, both with a lemon garlic marinade and 3 meat ragu with polenta & salad on Sunday.
The one day that could get called for batting practice or be rained out I have planned shrimp scampi over pasta because it is fast & easy.
The other 3 days will be various sandwiches - a Cuban (assuming I can find more lard), turkey & cheese with cranberry mayo paninis and random cold cuts/leftovers.

ooohhh...Paninis would be good this week. Haven't had those in forever!

Stacey is way more gourmet than I am! We had cranberry orange chicken last night with balsamic dressing over rice.

We're also having chicken/broccoli casserole over rice, German pancakes, stir fry, Hawaiian haystacks, BBQ chicken and (because my girls are begging) Mac and cheese.

I haven't planned anything yet!

I might make pizza. We had nachos last night (totally broke the diet) and I have leftover cheese, so I'm thinking about making a nacho pizza.

I actually just planned out some things last night cause I have to go to the store in the next day or two...

Veggie pizza tonight.

Tomorrow we eat at Genghis Grill cause kids eat free, and we have a TON of free bowls there left over from the contest.

Then the rest of the week, in no particular order:

bbq pulled pork with homemade buns and sweet potato fries

black bean quesadillas with homemade salsa & guac

I want to make these this week, but I'll make the rolls homemade instead of using the packaged ones. Probably with a salad or something.

I'm also dying to make this, but I don't have a deep dish pan. If I can find a pan to use, I'll make it this week.

We'll also do our hummus veggie pizzas on flat bread one day this week. That's one of our easy go-to meals.

So far, skillet chicken enchilada schtuff (that we then eat in taco shells), homemade sloppy joes, spaghetti, and crockpot chicken with rice. Easy-peasy stuff in case I go into labor & DH has to take over cooking duty.

Monday - Marinated and grill London broil, with these awesome potatoes (so good and easy!), steamed brocholi.

Tuesday - Make your own thin crust pizza with salad and fruit

Wednesday - Chicken Marsala over pasta, green beans, salad

Thursday - Salsa pork carnitas (crock pot) with tortillas, yellow rice, black beans and corn.

Friday - Beef lettuce cups with fried rice, broccoli, fruit

Last Night we had breakfast for dinner. Today DS has soccer practise so it'll have to be something Quick and easy as well. Wedmesday I think we'll bbq.

Beef Stew/Pasta/Soup for Wed through Fri
Sat - im away so not sure yet
Sun - could be frozen pizza or if im lazy it will be subway as I am travelling almost 4 hours on Sun

Last night was hot dogs, grapes and salad. Tonight is pasta with garlic bread. Wednesday is cheese crusted chicken with broccoli. Thursday is burgers with fries and a fruit/veggie. Friday the kids will be with their dad and I'm heading to Disney with the BF so we're doing dinner on the drive (maybe Sonic?). Saturday is dinner at Hollywood Studios and Sunday night we're coming back so dinner at home or on the road.

fajitas and stir fry are the two my boys will not eat this week, lol!

Tonight is this...

Wednesday is Chicken Quesadillas and Refried Beans
Thursday night is Chick-Fil-A Spirit Night for the school so that will be easy
