Default Favorite Healthy Chicken Breast Recipes

Or less healthy, lol I feel like I have more recipes than I?ll ever be able to use, but I?m always looking for new ones around chicken breast. Link me up to some of your favorites.

We like this marinade (available at Meijer). I marinade overnight, then cook up the chicken and serve with rice and veggies.

Not chicken breast but skinless boneless chicken thighs

It's tailored for kids but it's a favorite in our house

I eat a lot of chicken and this is one of my newest faves. I was actually already buying it ready to cook for about three to four times the cost it is to make it and it's super simple

A digital designer posted this recipe in her newsletter a few years ago. I usually make white rice to go along with it for my DH and DS, as I normally eat mine without any sides. I have found that chopping the bell pepper makes it easier to eat. We also prefer Monterey Jack cheese. https://www.eatwell101.com/fajita-ch...sserole-recipe

My family loves this one....a skinny version of Chicken Parm. You can use veggie noodles or chickpea noodles for healthier version too.



We also use this Chicken Marinade and grill chicken: We fix this with grilled veggies (we put a mix of broccoli, cauliflower and carrots in a tin foil bowl on the grill), we also grill corn on the cob too. (this is a favorite of my kids)
We had leftovers of this one and I made more marinade and tossed the chicken, air fried it and put over white rice.

We also do a lot of chicken stir fry I make everything ahead of time too (rice is cooked and cooled in fridge, chicken is cooked in the instapot and chopped or shredded as well). We also have added diced zucchini and squash as well.

For years I have been making a dish called Chicken Ole. I didn't find a pin for it, but it is really simple to do.

Take 2-3 chicken breast and cut them into 1 inch pieces.

Combine one jar of your favorite salsa with yellow mustard and lime juice to create a marinade. I didn't put in measurements because I stopped measuring years ago, but basically it is a good squirt of the mustard and two capfuls of the lime juice. You can also use half of a fresh lime.

Add the chicken to the marinade and let it sit for at least an hour. I usually let mine sit over night because it is easier to prep it before bed.

Heat some butter in a frying pan and add the chicken pieces. Cook until done.

Just before it is done, add the marinade to the pan and reduce down to a glaze consistency.

Serve with Spanish rice of any side dish you prefer.

My family and I have always loved us some Chicken Ole! LOL

In the summer, I tend to make a lot of very simple meals like chicken quesadillas but in the winter I really like to cook..I have been focusing on making meals last longer. I like to bake a whole chicken then use the meat in different recipes such as pot pie or soup. It may not be as fast as a chicken breast but it is healthy
