Hit me with a yummy salad recipe!

I have two salad suppers to go to in the next week and I'm tired of my old standby salads. I usually do either a broccoli/cauliflower one, a layered lettuce salad, or apple/snicker salad if I'm in the mood for something sweet. Anyway, hit me with some new, yummy (easy!) salad suggestions! :thumbup:
 
Greek Pasta Salad. I have made this at least half a dozen times this spring/summer and it always gets rave reviews. I leave the feta on the side, and I leave out the olives and anchovy paste (I don't like olives, and anchovy paste just *sounds* weird, LOL!). I just kinda wing it at this point I've made it so many times, lol. I use a regular yellow onion instead of green onions, I use random pasta shapes that make me happy (like bowtie :)), I've chopped up whole fresh tomatoes instead of just cherry's, etc etc.
 
i love to make this one. it's a version of cosi's signature salad.

mixxed greens, pistachios (unsalted), craisins, grapes, pears, and gorgonzola cheese.

then a handmade Sherry Shallot Vinaigrette
1 medium shallot, minced (about 4 teaspoons)
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup sherry vinegar (if you can’t find sherry vinegar, substitute red wine vinegar)
½ cup olive oil

I also do a version of the greek with baby romaine, chopped tomatoes, calamata olives, cucumbers, avocado, red onion and feta cheese. I use Newman's Family Italian on mine and I'm asked to bring it every single time I'm asked to bring something. :)

My pasta salad is three kinds of pasta (fresh tortellini, radiatore, and tri color rotini), fresh mozzarella, arugula, cucumber, calamata olive, tomato, grilled portobello mushroom. I use Newman's Family Italian on this as well.
 
my FAVORITE summer time recipe is cubing tomatoes, onions, and green peppers into a bowl. mixing in some salt and pepper and then adding oil and vinegar. totally easy and SO yummy.
 
I counldn't find a pasta salad I wanted to make this summer when craving one, so I made one up. I get told its good, but maybe they don't want to hurt my feelings. ;) I just make up some small shell pasta, cut up a cucumber, put some shredded colby/jack cheese in with it, some pepper and dump Cucumber Ranch dressing over it. :mellow: I think its good anyway.
 
Oh and this is good too...my aunt makes it a lot
1 lb. spinach, fresh
1 pt. strawberries, fresh, hulled and halved
SALAD DRESSING:
1/2 c. sugar
2 tbsp. sesame seeds
1 tbsp. poppy seeds
1 1/2 tsp. onion, minced
1/4 tsp. Worcestershire sauce
1/4 tsp. paprika
1/2 c. vegetable oil
1/4 c. cider vinegar
Remove stems from spinach; wash leaves thoroughly and pat dry. Tear into bite-size pieces. Combine spinach and strawberries in a large salad bowl; gently toss with salad dressing. Serve immediately.

This is similar to the one I was gonna post if I wasn't running out the door to pick up kids from cheer leading :D :D It's so so good!!!! *drool*
 
This is my fave, a Bulgarian salad. It's easy and yummy.

You need:

2-3 peppers
4-5 tomatoes
1 cucumber
2 table spoons of olive oil
1 table spoon of lemon juice
100 - 150 g of salty cheese (you can use feta)

Clean and chop the peppers. Pour boiling water over tomatoes, peel them and chop them to cubes. Skin the cucumber and chop it to cubes. Put the vegetables in a bowl, add olive oil and lemon juice. In the end add the grated cheese, mix everything (with a spoon or similar) and let it stand in the fridge for about an hour.

It's similar to Greek salad, but you don't use olives and the cheese is grated, not cut into cubes.
 
Broccoli Garden Salad


Broccoli florets
Chopped purple onions
Bacon pieces (cooked, cooled and chopped in bite sized pieces)
Grated cheddar/jack cheese
Sunflower seeds

Dressing:

1 cup mayo
1/2 cup sugar (or equivalent Splenda)
2 TBLS. Red cider vinegar
