I had a meatball hero and fries. Except the meatball hero sucked, so I really only ate the fries. Awesome. And now I'm hungry since lunch wasn't good, and eating pringles select sundried tomato chips. I wish I had the cheese ones. Or cheese doodles. I REALLY want some cheese doodles.....
lol Col
I had OJ for lunch...lol I feed the boys got them down for naps all but the oldest and then I started cleaning and forgot all about lunch until I just saw this

Sounds DELICIOUS. I love potstickers. I make them (from scratch, more or less) almost once a week. :) They are pretty easy to make now that dumpling or wonton wrappers can be found in just about every grocery store!!

I make mine with lean ground pork, since that is how my dad makes them, and the restaurant we love makes them. You can use other meats (but other meats tend to be drier) or add some ground canned shrimp, or even do just a vegetable filling if you prefer. I hope I can make this recipe work. I've never had a 'recipe', I just have made them since I was really little!!
Steam Fried Potstickers
1 pkg. square wonton or round dumpling wrappers
Vegetable oil and/or sesame oil for the pan
1 tray LEAN ground pork
3 green onions (scallions)
1 hunk of fresh ginger, grated (about 1-2 tbsp)
1 egg
salt and pepper to taste
1-2 tsp of soy sauce
Optional:
1/2 cup of any of the following ingrediants, finly chopped : canned bamboo shoot, cabbage, bean sprouts, canned shrimp, grated carrot...
Mix above ingrediants into the tray of ground meat, and stir until well combined.
Take each wonton wrapper and dip briefly in water to dampen. Place a small amount (about 1tsp) of filling onto each wrapper and fold in half. Square wonton wrappers can have to corners cut off to 'round' them. Pinch edges. Repeat with remaining wrappers until meat is gone.
Oil skillet lightly, and place potstickers in the skillet. (we like to pinch the tips together to make a flower, and keep adding them until the pan is full and it looks like a big tight pancake of dumplings!) fry lightly for a few minutes, then add about half to three quarters cup water. Place lid on skillet and 'steam' dumplings for about 7 minutes, or until wrappers are well cooked. Remove lid and pour out excess water. Return skillet to heat and fry dumplings until bottoms are lightly crisp and golden, as you like.
Serve with a vinegar-soysauce-ginger sauce ! ( Just like it sounds!)
Potstickers can also be parboiled then just fried up to crisp up too.
I LOVE these!
