View Full Version : Lunch recipe recommendations

My husband's family was going to come over late Christmas Eve for light appetizers, desserts and egg nog while we exchange presents. Since we've been hit with snow, they've decided they don't want to drive home in the dark, so they are coming at 11:00am and staying through the early afternoon. Now I need to come up with something to serve for lunch. It is super casual. DH says I should just put bread and lunch meat out for sandwiches and call it good, but I'd like to do something a little more festive.

You gals are always so full of good ideas. Any recommendations?

ETA: There will be 7 adults and 2 kids.

We are wierd, we eat chinese appetizers on Christmas eve. Frozen mini egg rolls, frozen gyoza or chinese potstickers and a few terriyaki chicken kabobs. See wierd, but yummy and different.

I would say duck, but then you'd have to sing Fa ra ra ra ra and cut off the head with a clever!

I would have appetizer type foods....For instance, I make sausage balls (yum), cocktail wieners in barbecue sauce (done in the crockpot), we have shrimp rings, sweet and sour meatballs (also done in the crockpot), veggies w/dip, seasoned oyster crackers (I have the recipe if you want it)etc. I also serve cookies, fudge, candy that I have made....

Maybe the sandwich fixins like mentioned above and also make a soup? If doing sandwiches, I make up a minestrone. Or, make a hearty stew since it is so cold and serve with some nice bread? Or, even a lasagne and have salad and bread. All can be made ahead of time so no stress to the cook!

Thanks gals, great ideas. Now I just have to decide. Love your idea Col, but I think I'm going to have to add something moderately healthy to the menu :)

I love Roast Beef Bruschettas. Slice up a baguette, toast a little with olive oil top with chive cream cheese, a slice of RB & a slice of plum tomato...yum!!! Great appetizers and my guests always eat them up so fast!:)
