Shelly's Goo
1 box of Rice Chex (or other brand)
1 1/3 cups sugar
1/2 cup white karo syrup
1 cup butter (2 sticks) NOT MARGARINE
2 tsp. vanilla
1-2 cups peanuts (whatever you like)
Pour box of rice chex in a huge bowl. Heat sugar, karo syrup and butter over stove with candy thermometer until it reaches the soft ball stage (240 degrees). If you don't have a candy thermometer, then you know it's done when it's really bubbly and turns a light caramel color. (or check with a glass of ice water, drop a small amount in water and if it forms a "soft ball", it's ready). Remove from burner and add 2 tsp. vanilla (careful, it may spit at you). Add peanuts and stir. Pour over the rice chex and mix/stir with a big spoon. Spread it out on a "sprayed" wax paper or aluminum foil until it cools. Enjoy ---- it's addictive.
