yeah, so I have no idea what to make for dinner tonight... I have loads of food in the house, but I just don't feel inspired.
What are you making?

I'm making kielbasa casserole tonight. JP's been begging for it for weeks now.

I made a lower fat/calorie lasagna a couple nights ago, so we will have that reheated, with some fresh pineapple slices and I don't know about a veggie yet.

It was DD's night to create the menu. She picked... pork chops, apple sauce, PW's whatchacallit potatoes (We just called them "Squashed Taters"), and glazed carrots. I may or may not make a loaf of homemade bread to go with it... we'll see how ambitious I feel ;)

I'd kill a man for some meatloaf, but Jordan doesn't like meatloaf :( I might have to make a small one for myself this weekend, lol.

Jeff's working, so it's whatever crap we dig up night. Usually means chicken nuggets and tater tots or pb&j or Chef Boyardee ravioli. Blah. :D

No lie, I almost bought 8904894023890432 cans of Spaghettio's on monday. The only thing that stopped me was how weak I felt from the sickies, I couldn't carry them.

Quin has decided that we must have chicken strips and fries for supper. So I guess that's what we will be having. Simple enough, since we'll be trying to load up as much as we can into the moving truck tonight. lol

I am making taco soup from the Year of Crockpotting website for the first time. It smells good. Hopefully it will be a hit with the kiddos. I am making peanut butter cookies with kisses on top to help motivate them to eat without complaining to get dessert =)

I need to decide in the next few minutes. Tonight is a meatless night for us, so I think I'm making rice and beans (or maybe bean burritos) with mixed veggies and orange slices.

We're having Italian Chicken...crock pot style. This weather makes me so lazy. Petite diced tomatoes, chicken tits, mushrooms, onions, and lots of different seasonings. The girls will have that over egg noodles.

I have absolutely no clue what we're having tonight. We had crock pot salsa chicken in tortillas last night and baked chicken breasts with PW's Crash Hot Potatoes (which were SO yummy!!) the night before that so we are definitely not having chicken lol!! Nothing is really sounding good to me at the moment.
Hey Col if you want to make meatloaf for just you, you should make meatloaf muffins! I got the idea from the Kraft mag and they cook a lot faster than regular meatloaf (like in 1/2hr) & they're in nice little individual portions! My hubby & kids love when I make them!

We're having pancakes, eggs and sausage and if L.J. eats well (usually not a problem, he's my kid haha) then we may go get a 31 cent scoop of ice cream at Baskin Robbins.

I was just asking my mom what she is making and she said pancakes, eggs & bacon. I could go for some breakfast for dinner but I don't feel like making it. We have AWANA tonight so I may just go to subway or something.

I think dh will be making reindeer sausage and sauerkraut. He works long hours and doesn't really like to cook, so this is something he can throw together for him and the boys. If I was a good wife, I'd have it ready for him!! LOL!
I have to work tonight, so it will just be a quick salad for me before work. I don't usually have time to take a break and eat when I work nights, and I don't want to eat that late anyway!

I opted for a chicken and broccoli casserole. Not low-cal, but I spent every waking moment yesterday trying to CLEAN this place and I didn't feel like something I had to use four pots to make and stand over. :) I love reading these threads!! Wish we could do takeout here more often, too $$. :(

DH and I get chinese takeout wednesday nights and have it while we watch Lost - but I started South Beach a few days ago so that's out.....I am really pained :blink: I just love our weekly chinese and tv date. I'm not sure what I'm making for us - probably a salad....:cursing:

I do them with whatever potatoes are insanely cheap... generally NOT the red ones... just "normal" ones and they're still delish.

We just had Pork Medallions Alfredo over noodles and a garden salad. Sooo Yummy! I made it with fat free Cream Cheese and couldn't tell the difference!
from the Kraft website:
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/3 cup fat-free reduced-sodium chicken broth
1/4 cup KRAFT Balsamic Vinaigrette Dressing
1/4 cup KRAFT Grated Parmesan Cheese
1 Tbsp. lemon juice
4 cups hot cooked egg noodles
1 cup hot cooked peas
2 Tbsp. chopped fresh basil
Make It!
HEAT large nonstick skillet sprayed with cooking spray on medium-high heat. Add meat; cook 2 min. on each side or until lightly browned on both sides.
ADD cream cheese, broth, dressing, Parmesan and juice; cook until cream cheese is melted, sauce is thickened and meat is done, stirring constantly.
SPOON over noodles; top with basil. Serve with peas.
