Ok dh basically uses his smoker for:
1. Brisket (best I have ever eaten)
2. Ribs
3. Chicken (which we are so so on)
What else can he use a smoker for? I could use some recipes for rubs and meats and ideas of what else we can do with that smoker.
P.S. We're not much on veggies or fish.

Oooh, salmon or any kind of firm fish smokes really nicely (even if you aren't a fish fan). Smoked cheese is also really yummy. A really firm rubbery cheese works well, like gouda or mozzarella. (Trust me, it sounds crazy, but sooo yummy).
We have a smoker/bbq and we smoke our sausages on it too. Adds a really nice flavour to any sausage or weiner.

We love Strawberry's Shake On seasoning (http://www.strawsbbq.com/), we rub down a boston butt and smoke it over night. It is Yummy!
Another one is Greek Seasoning (http://www.greekseasoning.com/), is yummy for smoking a turkey.

If you go eat at BBQ places...they will have "smoked" the meats like ribs or chicken. You can purchase different types of wood to give the meats a different smoky taste...we like apple wood the best.
Do you live in KC by chance? If so, will share a bit with you next time dh smokes! He says it was the best gift I ever gave him...and he didn't even know he wanted one. lol

I wonder how big of a turkey dh's smoker can handle...I think I still have 3 turkeys in the freezer about 20 pounds each...plus a turkey breast. Maybe I will thaw out the turkey breast and try that.
Do you just eat sandwiches...or do you do anything with smoked turkey?

yea I shred the turkey add some seasoning (I like mesquite seasoning) mix in some miracle whip (or mayo if it is for my husband) and eat it as a sandwich or on crackers. You could add other stuff like onions/peppers/celery etc whatever you like I just like it plain

oh my husband also makes turkey noodle soup (same as chicken noodle soup but substitute turkey for the chicken). He uses egg noodles I think, chicken broth, tiny bit of salt and pepper, celery, carrots and turkey.
