And that's just what we're doing this weekend. Next weekend we're doing diced tomatoes/pasta sauce, more pickles (relish) and we're dehydrating fruit.
We have a local farmers market where we got 35 lbs of tomatoes for $18, a flat of strawberries for $4, that kind of stuff so we're really taking advantage of it this year and putting stuff up! I'm thinking of doing some meat as well cuz I'm Little House On The Prairie like that :)
In case you were wondering, that's:
7 Pints and 7 Quarts of Mild Salsa
7 Quarts of Spicy Salsa
2 Quarts of Whole Pickles (1 garlic)
2 Quarts of Dill Spears (1 Garlic)
4 Pints of pickle chips (2 Garlic, 1 Jalapeno)
10 Pints and 7 Quarts of Strawberry Freezer Jam (thanks Darcy for the idea!)
Yeah, we put it all up today. I'm tired now.

Wow that is a TON of work...but what a great price on those tomatoes! I'd be making salsa too if I could get that kind of price!

This is totally awesome Traci! My mom canned a ton of preserves this year - but we've been too busy to even think about it. I'm impressed you canned and made the CT decisions in one weekend!

This is our Salsa recipe (http://food.yahoo.com/recipes/eatingwell/592/fresh-tomato-salsa;_ylt=AkgDHrlLT.Wbhyz37NdHOTlIY.Y5), we modified it a bit...lots more cilantro and ore peppers for the hot version.
I think the canning was an escape from the MIL and it gave me time to think over my CT decision...and torture myself!

How long do you have to keep the cucumbers in the pickle juice until they can be eaten? (or can you eat them right away) Also how long will the salsa and pickles and such last?

it'll all last years..i bought the "quick pickling" stuff so it says only 24 hours but my mom says a couple weeks..
