I'm looking to add a few really good main dishes to my arsenal now that winter is right around the corner.

What are your favorite go to, stick to your bones, feel good meals for wintertime?

I love Rachael Ray's Italian Pork and Beans (http://www.boston.com/lifestyle/food/articles/2007/12/05/italian_pork_and_beans/)-- it's ready in 15 minutes, but tastes like it was simmering for hours! Serve with some crusty bread for dunking. :)

And Sandi Richard's Beef Fajita Stir-Fry on Pasta (http://www.foodnetwork.ca/ontv/shows/Fixing-Dinner/recipe.html?dishID=8114&titleid=83516)is soooo good and takes a more summery food and makes it perfect for wintertime.

Original Recipe Yield 6 servings
Ingredients
1 (10.75 ounce) can condensed cream of potato soup
1 (15 ounce) can mixed vegetables, drained
1/2 cup milk
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
2 (9 inch) frozen prepared pie crusts, thawed
1 egg, lightly beaten
Directions
1.Preheat oven to 375 degrees F (190 degrees C).
2.In a medium bowl, combine potato soup, mixed vegetables, milk, thyme, and black pepper.
3.Spoon filling into bottom pie crust. Cover with top crust, and crimp edges to seal. Slit top crust, and brush with beaten egg if desired.
4.Bake for 40 minutes. Remove from oven, and cool for 10 minutes before serving.

Ingredients

1 tsp canola oil
1 medium garlic clove(s), minced
14 1/2 oz stewed tomatoes
15 oz canned kidney beans, rinsed and drained
15 1/4 oz canned yellow corn, drained
15 oz canned tomato sauce
1 Tbsp chili powder
1/2 tsp dried oregano
1/2 tsp crushed red pepper flakes
1/4 cup(s) dehydrated onion flakes
1/4 tsp black pepper
4 Tbsp low-fat shredded cheddar cheese, sharp-variety

Instructions
Heat oil in a large, nonstick, heavy-bottomed pot over medium heat. Add garlic; cook, stirring frequently, until aromatic, about 2 minutes. Add tomatoes, beans, corn, tomato sauce, chili powder, oregano, red pepper flakes, onion and pepper; stir well.


Increase heat to high and bring chili to a boil; cook, stirring frequently, until chili is thick and flavors are concentrated, about 5 minutes. Spoon into serving bowls and sprinkle with cheese. Yields about 1 1/4 cups chili and 1 tablespoon cheese per serving.

Notes
Use a heavy pot or the chili can burn easily. If it starts to stick to the pan, reduce the heat and stir constantly.

Crockpot butter beef.

Get some stew beef, season liberally with salt/pepper or Montreal Steak seasoning and brown. Toss it into the crockpot with a few pats of butter, a packet of onion soup mix, baby carrots and a can of beef broth. Let it cook until the carrots are tender and the beef is done. Serve over egg noodles or rice.

We've started throwing everything but the beef in two hours before the beef since the cubed beef cooks very quickly. That way, the carrots get to cook and soak up the flavor of the soup mix and broth without overcooking the beef.

In a crockpot combine:

2-4 frozen chicken breasts
Salsa (1 cup to 1 jar depending on how many chicken breasts)
1 can diced tomatoes
Cumin, chili powder and salt to taste

Let this simmer on low for 4-6 hours.

Shred the chicken using two forks.
Add:
1 can black beans
1 can corn.

Let warm through for another hour or two. Serve in a bowl like chili or drain and fill taco shells or tortillas.

Forgot, I make Baked Mac & Cheese a lot, too. Just made it tonight, so I actually have sizes.

Boil 12 ounces of noodles like normal. Then melt 1/3 cup butter, when melted mix in 3 T flour, then 2 cups milk and 10 ounced shredded cheese (I like to mix cheddar with colby jack). Pour sauce on noodles, then put into oven dish. Stick it in the oven for 10 minutes. Then broil it for 5 minutes (this makes the top crunchier). There's tons of ways to make it, but this is my favorite.

Good old beef casserole is a favourite in this house during the colder weather! :)

I do it in the slow cooker so just chop the veg I want, which is usually potatoes, carrots and parsnips as that's what the kids like, then I brown the beef in a frying pan and add a touch of balsamic vinegar and red wine at OH's request lol, before putting it in the SC! I normally put a squeeze of tomato purée in and some garlic! Then I leave it from about 10am until 6pm on low so all the veg is nice and soft!

So yummy! And guess what I have cooking in the slow cooker right now! :thumbup:


Another fav I make is soup in the SC!

I add veg same as above, soup mix and lots of bacon pieces then add water and let it cook for about 6-8 hours(maybe more if it needs it) in the SC, you have to keep checking on it to add more water as the lentils thicken it, so it's not one you can just leave all day! It's super easy and delicious on a cold winter day!

The slow cooker means I can be lazy and not have to measure ingredients lol, I just chop as many carrots, potatoes ect as I think I'll need as it depends on the size of the SC you have and how many you will be feeding, I love easy things to cook!! :p

Pork Chop Soup ... one of the few things the kids will eat from the SC ...

Boneless pork chops (fat cut off) ... in crockpot ... with several cans of cream of celery soup ... and equal amounts of water. cook on high all day.

Take 2 forks and shred pork chops about an hour before you want to eat ... and add minute rice. Cook on high. Add more water if needed.

Not a lot to it ... but I have picky kids and dh and they would just not even eat it if a shred of veggies were added to it ... it's just how my mom used to cook it for us growing up.

....Sonja has a really good Cherry Pork chop recipe for the slow cooker.

I love winter cooking, all the yummy goodness.

One of my favorite winter recipes is Mustard Stew (sounds kinda....eh?? But is very, very yummy, imo)

season and brown 3-4 large pork steaks (bone in works best, but I do trim the fat off) in a small amount of vegetable or olive oil
do a rough chop on 4-5 large onions (I usually use one more onion than I have steaks)
once the steaks are brown, layer them in a large stock pot or dutch oven with the onions
fill the pot 3/4 full of water and bring to a boil
reduce heat and let simmer for about 3 hours or so. Keep an eye on it, and stir every so often so that all the pork steaks are cooked evenly and thoroughly
After about 3 hours, add in salt and pepper to taste, and the mustard. The amount of mustard depends on how much you like the flavor of it. I'm not a HUGE fan of it, so I only add in a few dollops, but if you love it, you can add in more.
Let simmer for another 30 minutes or so
Serve over boiled potatoes or rice
**ETA...this can also be done in a crock pot or slow cooker. The prep is the same, just put in about 1 to 1.5 cups of water and cook on low for 7-8 hours. Add in mustard about an hour before serving.

Another of our favorite winter meals is steak and gravy cooked in the SC. I buy round steak, and cut it into serving size pieces, toss it into the SC with a roughly chopped onion and a couple cans of cream of mushroom soup, cook on low for 6-8 hours and serve over mashed potatoes or rice.

I just fixed a new recipe tonight and oh my gosh it was GOOD!!!!!!! ...and I rarely say that ... usually by the time I have fixed something and smelled it cooking ... I have no desire to eat it ... but I had seconds! ... okay thirds!!

It is called "Healthified" Chicken Tortilla Casserole ... and it's on the betty crocker site.

Fixed it with some rolls ... and it was SOOOOOOOOOOO easy to fix ... especially since I had grilled chicken in the frig.
