So I think I'm going to end up with approximately 15 pounds of leftover turkey. My husband aunt made this awesome recipe a few years ago with leftovers. It was turkey and cheese and a cream-of-something soup. She then made some pasta, and some rice and you could choose which you wanted to layer it over. It was amazing. Anyone have a more precise recipe than that?

What do you do with all your leftovers?

*Note: My FIL gets a turkey from work every year, which we are frying. I'm pretty sure Jordan said it's 22lbs. My MIL seems to be nervous that no one is going to like the fried turkey and went ahead and bought a 12-14lb breast which we are roasting in the oven. So I'm going to end up with a TON of leftover turkey, hence this thread.

This sounds pretty similar to what I meant.

I usually make some "turkey salad" with some of my leftovers. Just using my fave chicken salad recipe with turkey instead of chicken. I make sandwiches out of it, or eat it on crackers for a light lunch.

oh it is my favorite time of year when we have loads of leftover turkey!!

I chop it up really fine, put some seasoning in it (usually some sort of hickory seasoning) maybe a little dash of salt and pepper (or you know you could use Old Bay LOL) :p

Add a little miracle whip (or mayo if you like it better)

eat with bread or on crackers. It is so good. I like turkey salad even more then chicken salad.

my mom always makes turkey croquettes. I have no idea what's in them, but they are SO good!
