Ok so I have seen this from 2 different people this week alone.. someone I know is doing the 17 day diet (low carb) and posted about this.. has anyone here tried a recipe like this? Or if you do try it.. let me know what you think!

oooh... interesting! Hmmm.... I've got a head of cauliflower here... I'm going to try to give it a go tonight and I'll let you know what happens. We've done the whole "fake out" mashed tators (cauliflower replaces the potatoes)... just last night, again... my hubby who is a HUGE meat and potato guy, didn't mind.

That sounds interesting. The only thing I've had with cauliflower lately was a WW recipe, where you toss them in seasoning and bake them...they were really yummy!

My hubby was late coming home, so the pizza was cold when we ate it... but it was still very yummy. The crust was the same rate of crunchy as with any other pizza I've made - a lot more crunchy on the outside then the inside. I had my hubby taste it before I told him what the crust is made out of... he was really impressed. You don't really taste the cauliflower if with the toppings. Even my 4 year old ate some of it... but he had a big lunch, so didn't eat that much of it. So in the end - we'll be making it again... :thumbup:

Very interesting!! I'll have to try it. We are trying to do low carb again here...but I'm getting bored of the same foods! I've done the mashed cauliflower before and we really liked it...so I'm going to try this!
That definitely sounds interesting. After hearing what Rebecca has to say, I might have to give this a try!

My hubby mentioned again this morning how good the pizza was and asked if we could have that again soon... ha, ha!!
I'm wondering if it will work with Veggie Pizza - you know the one with the cream cheese mixture as the "sauce" and then raw veggies and cheese on top... the base usually it's on pillsbury dinner rolls... but in hopes to eat more cleanly - might be a good swap!

We're having this tonight. I'm just using a parmesan garlic alfredo sauce as the base, and then some spinach, artichoke hearts and tomatoes on top. I'll let you know what we think!!!

We absolutely loved it, BUT...I would not say it tastes anything like pizza. Mine wasn't crispy either.
I only had a baking dish, so I doubled the recipe and cooked it in a 9x13 pan. We made the white sauce veggie pizza. Maybe if I'd used red sauce and meat, it would've tasted more like pizza.
It was very delicious though...I'm sure we both ate too much. My dh was going back for thirds and I had to tell him to back off! That's for lunch tomorrow! It might be better as a small side dish with a piece of grilled meat.
Anyway, I'm sure I'll be making it again and I know my dh will be asking for it!
