Close family friends just had a baby boy... and we were going to see Baby Dennis for the first time and since it will be after my hubby gets home from work, I would make dinner and take it along... but I don't know what to make... we ALWAYS have pizza, so I wanted to do something different... so please hit me with any ideas... oh, I can't do pasta (gluten issues)... :) ... Yes, doesn't that make it harder!!! LOL!

Thanks much!

Have you tried the Tinkyada brown rice pasta? It's gluten free and I like it once I get the sauce and stuff on it.

I have... I just not sure I want to make a dish with it in it for non-gluten problem people... ;) They know of my issues... but they don't "get it"... so I'm hoping to come up with something that doesn't have pasta in it, kwim? The last time we had dinner over there, they served lasagna... that visit didn't last long.

After having DS, one of my friends brought over a rotisserie chicken, lemon rice, and salad. It was absolutely amazing, even in it's simplicity.

Totally understandable. I usually make both. One for them and one for me (& anyone else who wants to try it).

I do like the idea of a chicken, rice, salad.

Or potatoes are an easy sub for rice.

Chicken caesar salad without croutons?

What about a taco bar?

I like the idea of a rotissere chicken, salad and lemon rice :) You can pick the chicken up at Safeway, they are fabulous :)

I'd probably do a taco bar of some kind, that allows you to stay gluten free but lets them eat something 'normal' to them
