Scalloped Potatoes
Layer slice potatoes, salt/pepper, a sprinkle of flour and shredded cheddar cheese. I usually layer 3 times and then add a little milk. (I know, I'm super exact here right? LOL)
Bake at 350 until potatoes are tender.

And these I found on Pinterest...sooo good!!

They are great roasted (use a low starch potato: white, yukon gold, or red potatoes). Chop (peeling optional) and then toss with olive oil, rosemary, coarse salt. Roast in 425 oven for about 30 minutes. Stir serveral times during cooking. Works best if they are in their own layer rather than piled in a big heap.

There are endless variations on this recipe. Like varying the herbs. Also, in the last 5-10 minutes of cooking you could sprinkle a few additional veggies on top, like diced green peppers, onions, olives, grated cheese or feta. A 'greek version' with dried basil, bell peppers, tomatoes, kalamata olives and feta is delightful.

I was going to say Crash Hot Potatoes too - yum!

Also, my dad starting making potatoes on the grill when I was a kid. Boil the potatoes whole, but take out before they fall apart. Cut in half length-wise (skins on) and put them on the grill. Back then, it was innovative and we called them Mo's Potatoes. :) We've been doing them like that ever since. You can also brush on BBQ sauce while grilling.

This but sometimes with Lipton Onion Soup Mix instead of the herbs. Yum! My kids love it too and it's super east when you are already roasting a chicken or something in the oven.

I also just slice potatoes like steak fries and then over bake. When almost done I sprinkle on 2% cheese and turkey bacon. That one is a winner here too!

Hashbrowns (http://heavenlyhomemakers.com/freezer-full-of-healthy-foods) (and they freeze well!)

We do roasted potatoes a lot with all sorts of varieties of herbs and spices on them (garlic is my fav..and we ad a lot of garlic!)

We slice up red potatoes and steam them with butter and dill.

Spiced Potato Curry (http://redchillies.us/2010/08/13/spiced-potato-curry/)

Delmonico potatoes (http://southernfood.about.com/od/potatocasserolerecipes/r/bl30319j.htm) - this is when I'm feeding hubby a birthday or V-day steak dinner..these are not typical for us, but they are good.

Boxty (http://southernfood.about.com/od/stpatricks/r/bl80315c.htm) - Think pancakes..but can be sweet or savory

Latkes (http://www.myjewishlearning.com/holidays/Jewish_Holidays/Hanukkah/At_Home/Foods/Easy_Latkes.shtml) - which really are just fried potato cakes and can have all sorts of things added to them or made simple

gnocchi (http://localfoods.about.com/od/basics/r/potatognocchi.htm) - pretty labor intensive to me, but it's a great fun weekend meal to chip in on

I only started making mashed potatoes the other day. LOL Usually I only use them for fondues, but now that I know how easy mashed potatoes are, I'll be making them more often! I love my mom's twice baked potatoes.

Then don't :) There are few recipes that really need to use peeled potatoes...just scrub 'em good and keep the vitamins and minerals ;)

my favorite way to eat potatoes is when you just peel and boil them :) Super yummy that way! Especially good with Swedish meatballs!

i had a peeling accident as a child (peeled my skin instead of the potato) so if we have them, the skin's always on em ;)

Ooh I'm glad this thread popped up. I'm so boring with potatoes it's not funny. Really should try some of these recipes. My waist line will probably not thank me though.
