is anyone doing anything for Cinco de Mayo? We hare having a neighborhood/birthday party and I need some menu ideas to get together. I bought some fun decorations and now I wanna design a kit to match! Think I may throw it on my to-do list for this week. So, let's see what kind of things you are serving or would serve!!

I love the idea of a kit to match... That would be great to scrap a few of my Mexico pictures from our cruise, plus we eat Mexican food about half the time.

And I tried to link some good Pinterest finds, but my account is going crazy. I will try agan later.

We aren't doing anything, but if we would I would probably serve the following: homemade salsa, chips, guacamole, fajitas, pinto beans (cooked several hours with cilantro, bacon, onion, various spices, etc, etc), and rice. Sounds good-maybe I will serve a WW friendly version ;0) I'm a Mexican food fiend.

We don't celebrate Cinco de Mayo, but we do enjoy some good Tex-Mex :)
Tacos, fajitas (shrimp or chicken), chips & salsa are the norm around here.

Cinco De Mayo is Karsten's birthday, we always have cake! LOL

oohh... need a mexican style kit - I have a huge need for that!

I went easy this year because we will be a homeschooling conference all day Saturday - so I got some tamales and burritos from wally world's freezer section... and then have salsa and chips and I'm make spanish rice. Then for dessert we are having choco taco...haha - I haven't had one of those since I was a kid!

I made these Shredded Beef Tacos a couple of weeks ago and they were AMAZING!! And since it's in the crockpot, it's super easy.

My son's prom is that night so after taking pictures, I think we'll either go to a Mexican restaurant, or if it's too crowded (likely) do some Mexican take-out.

We just celebrate Cinco de Mayo because it gives me a specific day in which to do a major cook-a-thon/eat-a-thon ... the kids and dh look forward to it every year. This year my sister and her family are coming. Typically I fix all the food for May 5th ... then we reheat all week long ... which is a bonus. Not sure how many leftovers we will have with 9 people eating ...

Oh wow!! Thanks ladies!! Gotta get the menu written up, shopping list made and then get my designing going!! Gonna have cake too since it is also my youngest birthday party that day.
