Okay you organized moms - what are you making for dinner tonight?
We have to be at the Y for a work out at 6:30 and DH won't be home until around 7 so I'm totally uninspired to cook anything too elaborate because we'll be eating in shifts tonight. So inspire me please....

I am of no help! I have chicken breasts in the fridge... some potatoes... some fresh broccoli. Something will come of it. Unfortunately, I was not great at meal planning this week. :p

I'm going to a Chamber Mixer tonight, so DH is going to be left to fend for the kids...leftovers it is. Not really inspiring, but it's easy.

Celeste - do you have set foods on each night? I had a roommate in college whose family did that each night of the week the had a designated thing they would eat.
Usually Thursday night we get $2 Tacos at a local restaurant, but we spent a lot eating out last weekend so I'm trying to make up for it this week.
Brooke - I had similar ingredients last night and made chicken curry over rice which was soooo good. The kids had chicken with terriyaki glaze instead of the curry sauce. It was like eating out but at home. Yum!
Deb - I'm jealous. You go eat your pasta....I have to go workout. :(

I'm making chicken enchiladas w/tomatillo sauce, yellow rice and black beans. One of my favorite meals and I won't eat any of it. :( I'll be having a protein drink and some steamed veg. Yay! :crying:

I made beef stew in the crockpot yesterday, so we'll have that leftover tonight. Thursday is my husband's school night, so we always do something easy. :)

The image is not linked on Pinterest, so I found an alternate recipe that seems the same...
4 or 5 potatoes, peeled and cut into chunks
1 large onion, cut into rings
a couple of handfuls of green beans
1 (1 pound) package Hillshire Farm Smoked Sausage, cut on the diagonal
3 tablespoons oil
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
Use a 9 x 13 baking dish lined with foil and sprayed with cooking spray. Toss vegetables with oil, sprinkle on salt, pepper, garlic powder and basil. Cook in preheated 450 degree oven for 30 minutes. Remove from oven add sausage. Cook for 15 more minutes. Makes about six servings. Enjoy!

Stephanie - that looks good! I wonder if I could get my family to eat it. I think I"m going to "have" to try.
Everyone's dinners sound delish. I think we're having left overs/clean out the fridge night here.

I'm hoping my husband will grill, if so.... Grilled carribean jerk chicken and putting that over rice and some grilled veggies. Probably sugar peas & carrots, since that's what is in the fridge. We have ballet tonight from 4:30 to 5:30. If he won't grill(after all he worked all day) then I'll just hit up subway after ballet and tomorrow I will grill the chicken. :)

We are having this.

And if you want a little less sweetness or texture.....you can sub applesauce instead of the apple pie filling. I have done both and it is yummy. :)

Normally Thursday nights we alternate weeks between breakfast for dinner and Mexican night. But this week we've had to change things around because of sick kids early in the week and some evening events. So I think tonight I'll make turkey burgers, corn on the cob, and cantaloupe for the kids. DH will have leftover pork with the same sides as the kids, and I'll have a big salad with feta, tofu, mushrooms, and apples.

Uh, yeah, I still have no clue, so probably just find whatever I can in the kitchen. I haven't bought groceries since we came home from vacation last week yet and we have hardly any food. lol
I have fish out...I think I will crust it and bake it. Maybe some sweet potato (baked) fries with it, and brocolli, or some sort of veg!

As is the case for us during the school year there was either a game or practice tonight so I made Tortilla Soup in the crock pot to have when we got home after the game.

So, Juli, how did you make your curry. I LOVE curry and so do my kiddos, but I've never made it. :)
I know I'm not Juli, but I wanted to share my recipe since it's reallly easy and customizable. :)
I use these pastes. The first one I get in the specialty aisle at the grocery and the second one (in a can), I get at an Asian grocery in Ottawa. Both come in a wide variety (green, yellow, red, etc...) I actually mix in the crockpot some of the paste with some coconut milk, liquid beef or chicken concentrated broth, some fish sauce (nuoc-nam) and sometimes a dash of oyster sauce. Than I add the meat (veal, beef or chicken), potato cubes and some bamboo shoots from a can. Let it cook on low until the meat is tender and done. If I want to do a fish or shrimp curry, I make the sauce in a pan and once it's simmering, I throw in the fish or shrimp for just a few minutes, so that it doesn't overcook.

We go to the one down in Macon. It's amazing!!! Yeah, we had to google it when they built it bc we were confused with the egg in the O. lol. It's the best Italian food I've ever had! They make their pasta fresh everyday. It's soooo good!!!

Thanks for jumping in there! I PM'd Brooke, but wanted to say that I"m glad I'm not the only one that uses the jar stuff to make curry. I actually totally cheated and made Panang Curry using an already made jar sauce because I had never made it at home. I did find a great recipe on Allrecipes.com so after I find a good Asian market that has Panang curry paste - I'll be trying to make it at home.
Jar or fresh...either way it satisfies my desire for Thai take-out with less price.
