OKay, with all the fans of chocolate chip cookie dough out I discovered in the other thread, I thought I'd post this easy recipe (and there are no eggs in it, so have no fear of food poisoning!!) Oh, and another truffle recipe I love. Enjoy. :)

Chocolate Chip Cookie Dough Truffles

1 stick softened butter (1/4 cup)
1/2 cup brown sugar
1/2 cup white sugar
¼ confectioners sugar (icing sugar)
1 cup mini semi-sweet chocolate chips
2 tsp. vanilla
1 1/2 cups flour
chocolate candy melts – approx 2 cups

Instructions

To make the truffle filling, whip the sugars with the softened butter and add your vanilla as though you were making cookie dough! Mix in the chocolate chips and half of the flour. Mix well, and slowly add more flour. If mixture is super sticky, you can add a little more flour (you may not need the full amount given) Set bowl into the freezer to set up a bit. Roll mixture into small 1 inch balls and place in the freezer for at least 20 minutes to freeze. While the truffle fillings are freezing, melt the coating chocolate in double boiler or microwave. Lower truffle balls into coating with forks and cover completely. Set onto wax paper to harden and cool. Makes about 60 truffles. Should stay refridgerated, can be frozen.


White Chocolate – Chocolate Cheesecake Truffles

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 cups powdered sugar
½ cup granulated sugar
½ cup flour
½ cup of oreo cookie crumbs
2 tsp. vanilla
1-1/2 pkg. (12 squares) BAKER'S Semi-Sweet Baking Chocolate, melted
1 pkg. white chocolate candy melts


Whip cream cheese until smooth, and gradually add sugars. Add flour and oreo crumbs slowly. Add vanilla and mix until smooth.
Melt chocolate over double boiler or in microwave. Slowly pour melted chocolate into cream cheese mixture. mix well. Refridgerate until firm and roll into truffle-size balls. Chill in Freezer until firm. Dip into melted white chocolate and sprinkle with cocoa or oreo cookie crumbs. Store in refrigerator.

I have made these...They are YUMMMMY, I also made a really small batch and put them in some homemade vanilla ice cream this summer-KICK BUTT!
