I had a week (last week) where I couldn't scrap at all. lack of time AND mojo...now...
I'm completely and totally overwhelmed. What do you do when there's just so. much. stuff?

Take one thing at time. Find pictures first maybe and go from there.

Yeah, I would start with the photos as well, and then only look at the stuff that works with them. Ignoring all the other pretty stuff. ;) Hard as it may be.

I put everything in a folder, I pick one kit and drag it out (since I already know what I want to scrap/photos with it) and I go from there.

have you ever thought about scrapping multiple layouts at the same time? Sometimes when I scrap and use templates what I would do is just place my photos in various templates then go in with the kits after that.. sorta doing the layouts in steps.

When I lose my mojo, I got through my stash and find a kit I haven't used that really jumps at at me, then I start playing with it, I find pictures for it later. It gets me really playing with design and different ideas rather than trying to make it work with the photo. That usually jump starts my creativity.
