DH is traveling this week, so I'm cooking for our family of 3. I don't want to cook anything too elaborate but I do want to cook something better than take out! So, share you favorite easy, week-night recipe with me, please!?

Here's one that I make -- Baked Orange Chicken. The kids love it. Sometimes I cheat and just make the chicken part and use Panda Express Orange Chicken sauce. . .

These look delicious! I'm definitely gonna make that tater tot casserole!

SALSA CHICKEN

Dump chicken, can of black beans (drained), 1/2 bag of frozen corn, and jar of salsa in crockpot. Cook on low until chicken is almost done.

Half an hour before eating, dump in stick of cream cheese. Stir into mixture. Cook another 30 minutes.

Serve in tacos, over rice, etc.

I make this alllllll the time and it's always a hit. Super cheap too. It doesn't look like much but it's really satisfying and I serve it with a loaf of bread from the deli.

My whole family loves this soup; I mix sweet potatoes in with the white potatoes & leave out the cream:

(I also use my food processor to make the spinach super small so no one complains.)

Yum. Not sure if I could make my DH eat this since he doesn't do beans but I would! My mom -- who was half Italian used to make this a lot.

I love soup but and I am also one of those people who would prefer the spinach super small so this sounds perfect!

I make something like that Farmhouse casserole with breakfast sausage. So good. I like the recipe you posted because I usually have most of those ingredients in the house.
