well I tried to make my own cupcakes. Who knew I shouldn't bake w/o a boxed mix?

I used Amy Sedaris's cupcake recipe (http://www.epicurious.com/recipes/food/views/AMY-SEDARISS-VANILLA-CUPCAKES-236125). In hindsight, I have to ask myself what was I thinking? She's not a professional chef. Well it's probably not her fault anyway. And I guess the cupcakes themselves were OK. When I was tasting the batter (I'll probably be struck down with salmonella now), I got a bit worried b/c the batter didn't taste all that yummy. I was really hoping for different texture than what I got. Something finer if that makes sense, like melt in your mouth, kwim?

But the real failure was the frosting. First of all I didn't have enough powdered sugar so I decided to make my own with my blender. I guess I didn't get it powdered finely enough. The frosting was very gritty. On top of that, I had too much milk in it so it is more glaze like than frosting like.

So I was anticipating yummy delicious cupcakes but instead got so-so ones with gritty frosting. :crying: You all know I was really wanting a yummy cupcake. Sigh. The kids liked them though. They don't know better.

I know what you are thinking . . . WHEN is she going to stop with the cupcakes? And I tell you this. I will not stop until I get a decent cupcake! :p And if you've read this far, you deserve a yummy cupcake of your own.

and now, I shall go to try to get a life . . .

Aww, I'm sorry about your cupcakes! My DH and I went through that a few weeks ago. We'd seen an episode of Throwdown with Bobby Flay where they featured these Red Velvet cupcakes with cream cheese frosting. My DH really wanted to try them and since they had a recipe on the food network site he thought he'd going ahead. But oh, they were terrible! The cupcakes were really bland tasting and the frosting was even worse. It literally tasted and had the consistency of cheesecake batter. I don't even think I managed to finish a whole cupcake they were so bad. :thumbdown: At least with a box mix you know what you're getting!

Really. Just pick up some of those mini cupcakes at the next bakery you come across (this way you don't feel guilty if you eat two, and little fingers tend to make less of a mess with this size - I've justified the heck out of this - so just go with it).

Oh. Yeah. Sorry about your sucky baking experience. You once again confirmed for me that this should be left completely up to the professionals.

awww....I am so sorry your cup cakes weren't the cup cakes you wanted just go to the store buy some and then "re-spread" the icing and you have "home made" cup cakes.....he he he

I agree that you need to run to the store and get some cupcakes -- you'll just keep craving them til you get some good ones.

well, last weekend I did get some mini cupcakes from the grocery store but they weren't that great either.

there IS a difference in store bought cupcakes and where they come from. i LOVE the ones from dillons (our grocery store) but i hate wm's. walmarts are nasty!

You need to try the recipe I gave you last night! Not only are they really yummy but they are super easy to make!! Which reminds me I need to pick up the ingredients when I go to the store here in a bit so I can make them again!!

Awww Mimi that stinks! I don't know that I've ever made cupcakes (or cake) from scratch. Maybe in cooking class in middle school... LOL!

I'm going to sound totally vague here, as I've never had these myself, but my sewing friend has. LOL

On Etsy, there's a lady that sells these (supposedly) divine cupcakes that come in a cute little jar, with fabulous fillings, and decorated all pretty with ribbons and stuff. (Scrapbooked cupcakes?? LOL) I haven't eaten one myself, and they're outrageously expensive, but she says they didn't disappoint.

Though I'd throw that little piece of trivia from an almost lurker out there for your cupcake pleasure. :D

If you are going to go the boxed route these ones will not disappoint you. Pick up the Pillsbury Funfetti Cake Mix(white) and the White Pillsbury Funfetti Icing, make just like the directions tell you. They WILL melt in your mouth...I have never tasted such a yummy cupcake in all my life!! My girl's birthdays are (4-17 and 5-7) and between those dates I made 6 batches of those and every single one of them was delicious!!! I had kids and adults fighting over them!!

Try em you'll like em ;)

oh thanks! those ARE very cute. Too bad i cannot bring myself to pay $52 for 8 cupcakes.

I think I will have to go the Funfetti route that Elizabeth suggested. Maybe I can serve them in jars :D

I wouldn't be caught dead paying that much for a piece of cake, but, apparently, they're the bomb if you want to indulge in cupcake bliss. LOL I think she sells them individually as well.
