View Full Version : Mmmmm! Salsa Chicken!

I remember a recipe swap thread awhile back and someone had a crock pot salsa chicken recipe on there. I got a late start and put it in the oven instead of the crock pot, and added a can of black beans and a ton of cheese and served it over white rice. YUM. the kids liked it, so it must have been good. Chad is out playing bingo with his mom and brother. So there is plenty left for him but i'm not sure when he'll get home. i had two helpings, now i'm sitting on the computer typing this out, burning off the calories (typing is a calorie burner, right? Right along with my thumb moving my trackball mouse? lol) So to whoever gave out this recipe, thanks cause i'm in love with it and plan on making it a regular meal!

omg it's sooooo good it's one of our faves now
Lindy it's super easy
put 4 chicken breasts
can of black beans
can of corn kernals
cup of salsa (or a jar haha)
in the crock pot and cook it til the chicken is done. I serve ours over rice
I'll see if I can find the thread. I use 2 cans of beans and corn b/c I use more than 4 pieces of chicken

Yum. Going to have ta try this recipe sometime this week. As it is winter here our crockpot always gets a good workout this time of year and we (by that I mean my DH, as he does all the cooking) are always looking for new recipes.

Well, I think cheese in general would up the fabulousness... I will have to give this a try and dust off my crock pot!

I"m going to have to try that for the boys and I - they'd be great in burrito wraps, I bet!
You know - we use the crockpot a lot in the summer, too, because it doesn't require me warming up the kitchen with the oven. Our kitchen is in the heart o f the living area, so it can heat everything up quickly if I turn it on. The CP is a blessing - especially when we can do lighter meals in it.
