Spaghetti with tomatoes, black olives, garlic and feta
Roasted veggie and black bean burritos

LJSDesigns 10-02-2012 08:18 PM

I actually did homemade beef veggie soup tonight as I was cold and it sounded so good. With the cooler weather we will do more soups and stews and casseroles. :)

I just made this. My oldest picked it out of our Rachael Ray cookbook. Honestly I didn't like it but everybody else did
Autumn Stew

mariewilcox 10-02-2012 08:27 PM

Mulligatawny soup (curry soup), chili, vegetables and dumplings (instead of chicken and dumplings), vegetarian Shepherd's pie, lasagna...

lovely1m 10-02-2012 08:33 PM

Mango Black Bean Chili (this is my friend's blog). I have made this often (vegetarian style, obviously), its amazing.

We love white lima beans & smoked sausage this time of year. I made a hamburger soup the other day that keira loved & it was super easy.

Fall is here? Where? I don't see it? At least not here in sunny California where I'm still living in 100 degree heat. LOL

SmallMoments 10-03-2012 05:41 AM

We had Butternut Squash Bisque and it was SO good! (Luke didn't like it but I think it's b/c he always asks me what's in it and being the dummy I am, I tell him. He was fine until he found out it was squash.)

We made The Best Tomato Soup You've Ever Had and, well, it wasn't. And it's still sitting on the stove from last night b/c we didn't want leftovers. But maybe you'll like it?

And either tomorrow or Friday I'm making stromboli. Mmm...

Stacey42 10-03-2012 06:47 AM

I just made a hearty meat ragu & had it with polenta. We're having chicken & dumplings this week and milk braised pork roast next week and beef stew over the weekend.

I can't link recipes because these are all from cookbooks & aren't on the net.

YepBrook 10-03-2012 07:07 AM

Tonight I'm making a recipe titled "Bob's Kielbasa & Cabbage Soup". I happen to love cabbage in the fall... it's a good recipe. Yummmm...

More things that I tend to make in fall:
Roasted Veggie Medley
White Bean Chicken Chili (I use a jar of Ortega green salsa instead of the can of tomatillos)
Apple Crisp

ayaandjudah 10-03-2012 07:59 AM

Do you think Quinoa would be good in chili? My kids refuse to eat it but gobble up my turkey and lentil chili and I was thinking of putting some already cooked quinoa in......

and mari...quinoa and black beans...do you just put them on top or is there more to it?

I'm definitely gonna check out your folder but I'm thinking I'm going to make that Mac & Cheese for dinner tonight.

Gemma 10-03-2012 09:20 AM

I love autum/winter food. My slow cooker also makes a reappearance at this time of year. I need to dig new recipes out this week! :)

Right!!! It's October, I'm not too pleased with the 90's weather this week...

but, that's not stopping me from starting my fall favorites. We'll do more soup, stews, casseroles, enchiladas, things that go in the oven that we pretty much abandon all summer.

Tonight, crock pot chili. I think I'll come home and make some cornbread to have with it.

I second this!

I want cold weather so I can make a huge pot of chili!

I need to find casseroles to make, the family loves them but Im bored of the same ol' same ol' thing!

Gemma 10-03-2012 11:11 AM

You're all more than welcome to come and stay with me for a few months lol. I haven't been able to get warm for ages and it's still only October!

I'll be on the next plane outta here...if I don't die of heat stroke on my way to the airport. :D

Trista 10-03-2012 11:46 AM

I'm subbing to this thread so I can check back when it actually cools off here. I can't even think about warm food with nearly 90 temps each day.

~longing for cooler weather

Arual 10-03-2012 02:50 PM

Where I live we basically have two temps.. blazing hot and freezing cold!

So as my kids put it we have two weathers here "Icecream weather and chili weather" ... LOL!

Yep. Still in the upper 90's here in the Sierra Nevada.

I have though, started adding a few more baked dishes into my meal plans: scalloped potatoes, fresh baked muffins, pumpkin pancakes. I baked apple cake for a church gathering last week.

I haven't gotten out the seriously fall stuff like sweet potatoes or winter squash yet.

Sasha 10-03-2012 04:16 PM

mexican soups!

I haven't tried this one yet though, but this is the recipe:

If you like couscous, this recipe is AMAZING! I have made it for others and they loved it, too. Read the comments for a couple of changes that work well.

LOL!!! I hear ya! We're still running the A/C, but I have to admit, I've been cooking some fall/winter dishes! I've been baking a bit too!

My family's favorite so far is this:

Crock Pot Cream Cheese Chicken Chili
I served it with rice. Every single person in the family raved about it, so I'm making it again on Friday and doubling it. I'm flying out Saturday morning, so the guys can have some leftovers while I'm gone!

I'm going to make this when I get back:

Butter Chicken

I'm going to make some Portobello Mushroom Stroganoff tomorrow night. I'm not sure if this is the recipe I'll use or not. I'll figure that part out later!! I'll be serving it over Spaghetti Squash!

origami 10-03-2012 07:46 PM

The problem with some fall recipes is that they are so heavy on calories (like stews).

Favorite healthy fall and winter favorites?

Just reviving this very old thread because I was looking for my old apple crisp recipe! There’s a bunch here I still want to try, so I’m posting to come back to it
