Heavenly cupcakes....
are sitting on my counter right now. I'd take a picture, but they aren't very pretty. Just standard looking cupcakes. But they aren't standard at all... they are:
Carrot cake cupcakes. With the best cinnamon cream cheese icing in the world... mmmmm! I've got 20 left. Who wants one?? :) |

1/2 cup shortening, room temperature 1/2 cup unsalted butter, room temperature 1 8oz brick cream cheese, room temperature 1 tsp vanilla 2 lb bag confectioner's (icing) sugar 1/2 tsp salt 1 tsp cinnamon *optional* ~ Cream together shortening, butter & cream cheese until smooth. Add vanilla & mix well. Sift together sugar, salt & cinnamon (if using), and mix it into cream cheese mixture a bit at a time. Make sure to use ALL the sugar. If the frosting is too thick, add small amounts of milk until it's the right consistency. NOTE - I made half this recipe and I iced 21 cupcakes generously, and I still have over half of the batch left over! Next time I'll do a 1/4 recipe. It makes loooooooots! |
