Crock Pot Chicken?
 
Any good recipes out there floating around? I usually throw in some seasoning and some sauce but I was looking for something new to me. :)

Hi. Not a recipe, but I top my chicken(pieces) in the crock pot/pressure cooker with spaghetti sauce sometimes. Then serve over pasta.

Sometimes, serve with fresh baby spinach, rinsed and then placed on top of the pasta and under the chicken/spaghetti sauce when plating. It wilts the spinach perfectly.

Here is my favorite go to chicken crockpot recipe!!

throw your chicken in the bottom
mix one box of stove top stuffing with one can of cream soup (whatever you have on hand mushroom, chicken, celery ect...) and add 1/2 cup water or chicken broth.
mix
spread over chicken
cook on low about 4 -6 hours

Here is another we love!!! :wub:
Creamy Red Potatoes and Chicken
1 1/2 Pounds Red Potatoes -- chunked
8 Ounces Neufchatel Cheese
10 3/4 Ounces Cream of Potato Soup
1 Envelope Ranch-style Dressing Mix
12 Ounces Chicken Breast Without Skin -- cut into strips

Place potatoes in slow cooker. Beat together the cream cheese, soup and salad dressing mix. Stir in chicken strips and spread over potatoes (or just stir all together). Cover and cook on Low 8 hours, or until potatoes are tender. Stir once after 5-6 hours. Stir before serving.
skinned chicken breast halves -- cut in strips

Here's one I make that my kids LOVE:
4-6 chicken breasts
1 8oz cream cheese
1 package italian dressing mix
1 stick butter

Put the chicken in the crock pot and cook a few hours. Then mix the melted butter, italian dressing mix, and cream cheese and pour over the chicken. Cook another few hours. Serve with rice. Yummy!

This one is my fav too but I now use Heinz (i think) gravy instead of the cream soup. I like the taste better. I usually use a jar of Turkey Gravy.. works great with pork chops and pork gravy.

Another one I love is chicken breast, chicken broth and a pack of taco seasoning. Then after it cooks for a few hours, I shred the the chicken and use it for tacos or burritos. Tastes yummy. You could use a variety of seasoning to your taste...but I'm sort of simple and I have picky kids.

These are recipes for whole chickens, from the Crockpot 365 blog.
My family loves these recipes! After we eat the chickens, I use the bones/carcass and make chicken broth overnight in the same slow cooker. Cheap and healthy!!

I like to pour a bottle of BBQ sauce over chicken breasts or thick boneless pork chops and cook them until the meat just falls apart. Serve with a baked potato and veggie.

I use another variation of this:

4-6 chicken breasts
1 can of cream of chicken or cream of mushroom
1 carton of sour cream
1 8oz cream cheese

Tried this last night and it was delicious! My dad was over for dinner and loved it. Super rich - I think I'll use half of the cream cheese next time. :)

Christy, we had that for dinner last night too! It was AMAZING!!!! DH thought it was too rich too, so I'll probably do the same! :)

Yeah, the first time we had it was a little rich too--but I thought it was the dressing--not the cream cheese. Maybe it wasn't rich to us, it was strong. The next time I changed something but didn't like it quite as much, so when we tried it again, I just left it and either we got used to it, or just liked it more!

We have a recipe like this that's really good. We mix the BBQ sauce with some sort of preserves -- peach or apricot. Plus a couple tablespoons of yellow mustard.

I put a few pounds of chicken breasts in with some seasoning and let it cook all day. Just before serving I shred the chicken and cook quinoa and add it with some chicken broth for a yummy chicken soup/stew. If my family would eat cooked carrots & celery I'd add those, too.

My friend just made this for us and it was sooo good--and easy too!

Chicken Chile
1 can (15 oz) black beans drained and rinsed
1 can (15 oz) pinto beans drained and rinsed
1 can (15 oz) kidney beans drained and rinsed
1 can (8 ¾ oz) whole kernel corn drained
2 cans (14 ½ oz) chicken broth
1 jar (16 oz) thick chunky salsa
1 can (8 oz) tomato sauce
1 can chopped tomatoes
3 cups shredded cooked chicken
1 garlic clove pressed
1 ½ - 2 Tbls. Chili powder
1 tsp. ground cumin
1 med. Zucchini coarsely chopped

Bring to a boil, reduce heat, simmer 30 min if preparing over the stove. For crock pot, combine all ingredients and heat for 4-6 hours on low. You just want to hear through and allow flavors to come together.

Serve with sour cream, guacomole, chopped chives, olives and some salsa in little serving dishes to allow guests to choose what they want. Also, can serve with fritos! Put some fritos on the bottom of the bowl and then dish out the chili. Then top with the rest of the goodies. Really a crowd pleaser and everyone asked her for the recipe.



It’s pretty healthy until you add all the toppings like shredded cheese, sour cream, fritos and avocado…

i have to turn the crockpot on at 7:45 and don't walk back in the door until 4:30 or so. unfortunately, the chicken cooks much quicker than this time frame and it gets all rubbery by the time i get home. maybe i'll try some of these over christmas vacation though!
