Vegetarian Recipes

I am trying to move from a meat-centered existence to having many more vegetarian recipes. I just bought this cookbook because I like her instagram page and she makes it look so easy.

First recipe was a so-so stirfry. I think I partly goofed up on the recipe but can also see how I'd tweak it the next time.

So show me some of your kick-ass recipes that you turn to again and again!

At least the cover is pretty!

I tried adding more meatless dishes using the Forks Over Knives website. We found some good recipes, but then I remembered that we don’t like vegetables so I gave up. But I really recommend their recipes.

LiveEatLearn is another one I get recipes from. She has a beautiful Instagram account and meal plan ideas: https://www.liveeatlearn.com/.

Oh, I got you, girl! Here's a few favorites I make often:

4 Cheese Spaghetti Squash: https://www.eatwell101.com/roasted-s...-squash-recipe

Italian Quinoa: https://wendypolisi.com/italian-bake...omato-topping/

Mango Black Bean Chili: http://thelittleredplate.blogspot.co...ean-chili.html

Pizza Casserole: https://www.shelikesfood.com/30-minu...let-casserole/

Cauliflower Enchilada Casserole: https://www.closetcooking.com/caulif...ada-casserole/

Zucchini Noodle Bake: https://www.shelikesfood.com/lower-c...paghetti-bake/

If you are looking to add more protein, adding tempeh, nutritional yeast (adds a cheesy taste), and textured vegetable protein are super easy additions to many recipes. So is swapping almond milk for dairy milk. I do lots of legume/bean and quinoa. Good luck!

Clean Food Dirty Girl is my favorite place for plant-based recipes. They do all whole food plant based stuff. I subscribe to their recipe service now and then but they have tons of fantastic free recipes on their site.

"but then I remembered I don't like vegetables" totally cracked me up but I'll be checking out the sites. I plan to try lots more of the recipes in my new cookbook.
