Sure! It's actually pretty easy. My husband made this up. We took a class at the asian market this summer, and that's where he learned the basics. Then we have just played with it to get it how we want it.

Here are the ingredients -

1 package Rice noodles (we get these at the asian market because they are cheaper and we like the brand better, but they carry them at walmart or the grocery store)
4 tbsp hoisin sauce
4 tbsp soy sauce
4 tbsp oyster sauce
4 tbsp chili paste (be sure to check so that you don't get the super hot stuff here unless you're into that kind of thing. I don't like spicy - we use Pantai Norasingh brand in the medium-hot variety)
fresh mushrooms sliced
yellow onion diced
1 bag of cole slaw
1 bag of stir fry veggies
chicken (this is optional... we prefer the vegetarian version, but I'm mentioning it in case you want meat in it)

We cook this in a big 14" wok because it makes a LOT.

I should mention that we use low sodium versions of all the sauces when they're available, but that's a personal preference.

1. Soak the rice noodles. We like to soak them longer than the package indicates. At least 30-45 min.

2. mix the 4 sauce ingredients together and set aside (hoisin, soy, oyster, and chili paste)

3. sautee onions and mushrooms in 1 tbsp oil (we like coconut oil)

4. add in stir fry veggies and 2-3 tbsp of the sauce mixture. Stir continuously until veggies are cooked.

5. drain noodles and add to the veggie mixture. Jeff adds a few noodles, a little sauce, stirs, more noodles, more sauce, stir, etc. So that it's all mixed up evenly. Continue until you've added all the noodles and all the sauce.

6. These really don't have to cook very long. Maybe a couple of minutes - just long enough to get the noodles all covered in sauce. When the noodles are just about done, you can dump the bag of cole slaw in. Stir it all up. The cole slaw cooks FAST. When it's done, you can turn the heat off and enjoy!

This is seriously one of our absolute favorite meals!
