I scrapped rectangle until 2011, and by the time I switched I felt like I was one of the last rectangle scrappers left. I think it has had a bit of a resurgence, but I can't point you to anyone who consistently scraps inspiring rectangle pages. Cathy Zielske does some. I still scrap older photos rectangle, so most pages in my gallery here have one or two. (There would be more, but sometimes when I scrap a CT layout rectangle for my album I put it on an 11x11 background for the gallery.)
My best sources of rectangle inspiration are square scrappers. Square pages that don't span the whole width can easily be translated to rectangle just by "cutting off" a few inches of the background, and many other square pages can be compressed. I usually adapt 12x12 templates for my rectangle pages. The one thing I don't like about scrapping rectangle is that some photo sequences work better on a landscape canvas, so people have to turn my albums when they get to those pages.
