I'm hungry...yes I know it's only like 10AM...but I'm hard at work growing a baby and darn it that makes me hungry!!! :D :D

We have the girl's science Fair tonight so I'm just making homemade pepperoni and black olive pizza since that's quick and easy and can be eaten in the van and between "judges interviews". But last night I made a DELICIOUS Pasta Carbonara. It was quick and easy and the girls loved it so much they both took the left overs for lunch today!!! :D :D Here's the recipe:

Pasta Carbonara

SERVINGS: 4
CATEGORY: Main Dish
TIME: Prep/Total Time: 30 min.

Ingredients:

* 2-1/2 cups uncooked mostaccioli
* 8 bacon strips, diced
* 1 jar (4-1/2 ounces) whole mushrooms, drained
* 3/4 cup half-and-half cream
* 1/3 cup butter, cubed
* 1 teaspoon dried parsley flakes
* 1 teaspoon minced garlic
* 6 to 8 drops hot pepper sauce
* 1/2 teaspoon salt, optional
* 1/3 cup grated Parmesan cheese
* 1/4 cup sliced green onions

Directions:
Cook mostaccioli according to package directions.
Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. Brown mushrooms in drippings; remove to paper towels. Drain drippings from pan.
Add the cream, butter, parsley, garlic, pepper sauce and salt if desired to the skillet; cook and stir over medium heat until butter is melted. Drain mostaccioli; add to cream mixture. Stir in the bacon, mushrooms and cheese; heat through. Remove from the heat. Sprinkle with green onions. Yield: 4 servings.

I did double it and it was perfect for the 6 of us and the girls took two huge servings today for lunch!! I also couldn't find Mostaccioli so I substituted Penna pasta and the worked wonderfully. I also used pre cooked back and fresh sliced mushrooms....I don't liked canned or jarred :thumbdown: The time was still probably only 30 minutes because the time I saved cooking the bacon...I used to brown my sliced mushrooms. I served it with a fresh salad and garlic bread and it was a perfect meal!!! Quick, easy and delicious!!!

Ooooh, that looks yummy!! I was telling the kids about Carbonara the other day, they both want to try it. I think I'll use this recipe--just put the mushrooms on the side. (I can't stand the things.) Some gluten-free pasta and we're aces! Thanks!!

Andrew's still out of town, so we're just having leftovers of the Chinese I ordered last night. Well, JP and I will have that. Devin will probably eat Quicksadillas (mini corn tortilla, american cheese, mini corn tortilla, repeat for second one, nuke for 60 seconds) since the Chinese food isn't gluten free.

It's only like 8 am, lol...I have NO idea what might be for supper tonight. Maybe spaghetti...that's easy. Haven't had it in a while, either...

I'm doing a pot roast with carrots and potatoes in the crock pot! That pasta carbonara sounds yummy, I'll have to save that recipe :)

DH is working 7 -7 today so it's just me and the boys tonight for dinner. I'm thinking Chicken in a white wine/herb sauce with a veggie - probably peas. :)

We're having my favorite - breakfast for dinner!! Yum!!

The carbonara looks seriously yummy!! Will have to try that!! :) Thanks for sharing the recipe!!

no clue ... probably something with chicken breasts, since I think that's all that is in the freezer besides ground beef ... and we just had spaghetti last night. My tummy doesn't like too much ground beef (it's the cheapest meat around here, so we always have lots on hand to stretch a buck).

We're having spaghetti! Haven't made it in a while b/c it's not DH's favorite. But, I've been wanting it, so I'm making it! LOL

Nope, I've never made them before, Deb. I had leftover red potatoes from last week and needed a side for tonight... enter PW! Jeff has already asked me once why we had 'sticks' (the organic rosemary) in the fridge. *lol*

Glad to help enable, Elizabeth! :thumbup:

Grilled Salmon and Aspargus and something else I'm sure.

We're doing that biggest loser 30 day jump start diet.

I was going to cook but this rain is making me tired! Plus, my boy's going out on a dinner-date with his grandma, so we'll probably gonna do something quick like McDonald's. lol! But I always choose something "healthy" there, the grilled chicken salad or the grilled chicken sandwich.

well it is 10:30 at night and we just finished dinner...we were just out of almost everything...went to grocery store ($200 later)...remembered I had chicken cordeon bleu in freezer so called 20yo ds and told him to get them in the oven! Then came home and made velveeta shells and cheese to eat with it.

We buy our chicken cordeon bleu at Aldi's (one of the very few things I buy there) because it tastes as good as Schwann's, Sam's Club, or any other brand we have tried and they are only 99 cents each.

Well, DH ended up coming home at 5 instead of 7 so the kids had chicken nuggets and pineapple chunks. We had lemon chicken picatta over angel hair pasta with artichokes and mayo/lemon/pepper dip. YUM!

And I :wub: PW's crash hot potatoes!!! sooooo yummy!
