My FAVORITE thing with thighs......Cinnamon chicken. Seriously. so yum.
* 8 pieces of chicken (thighs and legs is what I use) or 3-4 breasts
* 1 tsp. ground cinnamon
* 2 tsp. kosher salt
* 1 tsp. freshly ground black pepper
Mix the cinnamon, salt and pepper in a small bowl. Rub the chicken pieces on all sides with the seasoning.
Heat the olive oil in a skillet over high heat (just enough oil to coat the bottom of skillet).
Add the chicken to the oil and brown for about 4 to 5 minutes on each side. Cover and let them "stew cook" for about 10-15 minutes on low-med heat. Cook until done all the way through.
Serve with a side or two and you should have an awesome meal! I usually serve with potatoes and a green veggie. SO YUM!
