I totally agree with you, Sheri!!
I'm drawn to bold palettes. I shy away from pastels.
I definitely want variety in flowers - not all the same shape... meaning I like to have some "roundish" and some "pointy" some that I can use as "small" and big bold ones. It helps make for more interesting clusters. I also mostly use realistic foliage and like to have more than one to use.
I like unique patterned papers. I don't know if there is anything new under the sun, but it makes me happy to see patterns that I haven't seen before (or maybe just don't remember!). I also like a variety in patterns - some big, bold patterns, and some smaller patterns. And, please, don't leave out solids!!
I like themed kits that are not so completely themed that they can also be used off-theme.
