When we still all gathered at mom & dad's house, one of my brothers would always volunteer breakfast duty and start making us either omelettes or pancakes and eggs (depending on the brother) as soon as we were finished opening gifts. *sigh* I miss those days.
These days one of our favourite things to do is stock up on bagels to toast, lox (smoked salmon), cream cheese, red onion and capers. It's super yummy, easy to do self-serve and nice and filling. And very little mess or work for anyone to deal with. I need to go check out that french toast casserole recipe though... sounds very nummy!
