We have the Breakfast casserole like Melinda's recipe. I also tried another one this year, which I might try for Christmas morning, that has hash browns in it.

Breakfast Casserole (with potatoes)
½ lb. pork sausage
1 medium onion chopped
4 cups hash browns, thawed (16 oz)
1 ½ cups shredded Monterey jack or cheddar cheese
3 eggs beaten
1 cup milk
¼ tsp pepper
In large skillet, cook sausage and onions, breaking up sausage. Drain fat. In a 8x8x2 baking dish, layer potatoes, half of cheese, sausage and onion mix, remaining cheese. In a bowl, combine eggs milk and pepper. Pour over cheese, etc. Bake covered in 350 F oven for 45-55 minutes or until knife near the center comes out clean. Cut into squares. Serves 6.

I left it overnight, cooked it in the morning and it was a hit at work when we had food day....
