Here's another good breakfast casserole I make. Its so yummy!
It would be good for x-mas breakfast.

Toffee Apple French Toast

8 cups cubed French bread, (1 inch cubes)
2 medium tart apples, peeled & chopped
1 package (8oz) cream cheese, softened
3/4 cup packed brown sugar
1/4 cup sugar
1 3/4 cup milk, divided
2 teaspoons vanilla extract, divided
1/2 cups English toffee bits and/or nuts
5 eggs

Place half the bread in a greased 13x9 inch pan. Top with apples. In a large mixing bowl, beat cream cheese, sugars, 1/4 cup milk, and 1 teaspoon of vanilla until smooth. Fold in toffee or nuts. Spread over apples. Top with remaining bread.

In another mixing bowl, beat eggs, remaining milk & vanilla together. Pour over bread. Cover and refrigerate overnight.

Remove dish from refrigerator 30 minutes before baking. Bake uncovered, at 350 degrees for 35-45 minutes or until knife inserted near the center comes out clean.
