Have you checked out Persnickety Prints' Covid-19 timelines? They've helped me keep track of global important info and they also have blank versions, if you want to journal your own way.
Right now I'm just scrapping photos or kits that "call" to me lol. No set project or goal except to enjoy my time scrapping. I've scrapped a bit of our self-quarantine but, like you, I'm still not sure exactly what direction I want to go.
