My GF made us a batch of these when Callen was born, and they were the softest most delicious cookies EVER.
Reason? Made with CAKE MIX. So. Awesome.

This is the recipe I used to make them today:
1 box of white cake mix (I used vanilla and they are still rather delicious)
1/4c oil (recipe recommends canola)
2 eggs
1/2 tsp ground nutmeg

1/4c sugar and 2tsp cinnamon for rolling them in.
Preheat to 350, line sheets with wax paper.
Mix all together (minus the rolling sugar/cinnamon) into a stiff dough with a spoon, roll into 1" balls, roll in sugar, place on sheets 2" apart, bake for 10-12 minutes. You want the edges set and lightly golden, but the centers stiff soft to the fingertip. Cool on a wire rack, don't refrigerate.

Absolutely delicious. They stay soft and chewy for a WHILE in an airtight container.
