Question What's for dinner???

I need to start making it in like 20 minutes and I have no idea what to make!!! *sigh*

It's kind of hot here and I just don't feel like cooking....wonder if my kids would mind having cheese and crackers for dinner!?!?!

I'm making chicken, rice and broccoli casserole, because I need some comfort food. And I'm starving!

Today should have been grocery shopping day, but I could only manage 10 minutes in Target (which at least has a decent grocery section now) while a child teetered on the edge of meltdown. So the kids and DH are having hamburgers, green beans, and sliced fruit. I'm having a big salad with vegetarian ground beef, salsa, and sour cream. We're all having banana oatmeal bread with it.

Grilling steaks, leftover potato salad and sauteed squash. Italian cream cake for dessert.

When I have one of those days we usually do breakfast for dinner. Kids LOVE it.

I'm trying a new Chicken Enchilada recipe today. Gotta say I'm a little half-hearted about it cause even though it sounds really good to me, I'm pretty sure I'm gonna hear a lot of complaining about it. And, I've had a bad day.

apple pancakes... a Vitamix recipe, tho, I'm making ours gluten free... topped with fresh strawberries and maybe some other fruit... and bacon... and agave nectar instead of maple syrup since we're out... this is obviously a last minute thing since Mark didn't want to grill out tonight

if it were up to me we'd just have smoothies

We had this (found it on Pinterest, lol):

It was pretty good, but I would make a couple changes next time. Less sauce & make it runnier (with more water) because it glued everything up. Also, my package of soba noodles said to cook them for 6-8 minutes, and they were done by 2 minutes - thank goodness I tested them, or they would have been nothing but mush, lol!
